Regular visitors to this site will notice I’ve added quite a few Banana Bread recipes lately. I bought a bunch of bananas and didn’t want them to go bad so what’s a guy gonna do? Make a Butterscotch Banana Bread of course!

I’m not going to lie. I think this is my favorite banana bread recipe. This recipe is so good, it was all gone only a few hours after it came out of the oven!

While this recipe can easily be confused with my Caramel Banana Bread recipe, this one has a slightly different flavor and consistency. I would suggest making both of them and decide for yourself which one is your favorite.

Butterscotch Banana Bread

The best bananas for banana bread are when they are overripe, not yellow but black. Or they’re at least streaked with black/brown. The darker the better.

If you can’t find overripe bananas, you can speed up the process by putting the bananas in a paper bag along with an apple and loosely folding down the top. The bananas should ripen in just a day or two using this method.

Ripe Bananas

You will need the following ingredients to make this Butterscotch Banana Bread recipe (see recipe card for quantities): Ripe Bananas, Unsalted Butter, Light Brown Sugar, Eggs, Vanilla Extract, All Purpose Flour, Baking Soda, Baking Powder, Salt and Butterscotch Chips.

  1. Preheat the oven to 325°F.
  2. In a medium mixing bowl, mash the bananas.
  3. Add in the egg, butter, brown sugar, and vanilla and mix until well combined.
  4. Combine dry ingredients. Add the dry ingredients to the wet mixture and stir just until combined. Do not overmix.
  5. Fold in butterscotch chips.
  6. Grease and flour a loaf pan and pour the mixture in.
  7. Bake for 65 to 70 minutes or until a toothpick comes out clean. Let the bread cool in the pan for at least 10 minutes before removing it. Let cool on a wire rack.

Ingredients
 

  • 3 Ripe Bananas, mashed
  • 6 Tbsp Unsalted Butter, softened
  • 1 Cup Light Brown Sugar
  • 1 Egg, beaten
  • 1 Tsp Vanilla Extract
  • 1 ¼ Cups All Purpose Flour
  • 1 Tsp Baking Soda
  • ½ Tsp Baking Powder
  • ½ Tsp Salt
  • 1 Cup Butterscotch Chips
