Cheesy Bacon Spaghetti Squash

It seems like we eat Spaghetti Squash once a week these days. I’ve published several recipes using Spaghetti Squash in the past but hoped to do something a little different this time.

My wife asked me if I’ve ever used a brown butter sauce with Spaghetti Squash and that inspired me to make this delicious Cheesy Bacon Spaghetti Squash dish.

Usually brown butter sauce is made by cooking the butter until it turns golden brown but for something a little different I added some brown sugar to it along with some salt & pepper.

The sauce brings sweetness to the dish and pairs really well with the Swiss cheese.

Depending on the size of the spaghetti squash, you might have to adjust the amount of bacon and cheese you use. Ideally you want the dish to be well balanced. The quantities I list on the recipe card was perfect for the size of squash I used.

Equipment Needed

Equipment can have a big impact on how a recipe turns out. Below are some of my favorite pieces of equipment that I use when making this recipe.

You will need the following ingredients to make this Cheesy Bacon Spaghetti Squash recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Spaghetti Squash – try to get the largest one you can for this delicious recipe
  • Bacon – use your favorite bacon and cook it till nice and crispy
  • Unsalted Butter – you can use salted butter but leave out the additional salt
  • Light Brown Sugar – you can also use dark brown sugar for this recipe
  • Salt & Ground Black Pepper – every recipe needs a little seasoning
  • Swiss Cheese – you can use another type of cheese if you prefer
  1. Cook the spaghetti squash using your preferred method. I like to cook mine in the oven for 30-35 minutes at 425°F.
  2. In a large skillet, cook the bacon until crisp, stirring occasionally. Remove the bacon to paper towels reserving the bacon grease.

  3. In same skillet, heat the bacon grease, stir in the butter, brown sugar, salt and pepper. Mix until blended.

  4. Add the spaghetti squash strands to the skillet. Toss and cook for 1-2 minutes. Remove the skillet from the heat.

  5. Fold in the chopped bacon. Mix till well combined.

  6. Stir in the shredded Swiss cheese.

  • 1 large Spaghetti Squash
  • 10 strips Bacon, chopped
  • 4 Tbsp Unsalted Butter
  • 2 Tbsp Light Brown Sugar
  • ½ Tsp Salt
  • ½ Tsp Ground Black Pepper
  • 1 ½ Cups Swiss Cheese, shredded
