My Uncle Rod recently passed away and told me that he did not want me to post his “secret” chicken tortilla soup recipe.
Since he is no longer with us (R.I.P. Rod), I was given permission by his widow to publish his recipe. If you are looking for a delicious chicken tortilla soup recipe then this one is for you!
What I like about his recipe is its simplicity. It’s amazing how just a handful of simple ingredients can yield so much flavor.
I pride myself on publishing recipes that use simple ingredients. While that is the case with this Soup Recipe, you might have a hard time finding two of the ingredients. Namely the Tortilla Soup Mix and the White Chicken Chili Seasoning Mix.
After visiting a few grocery stores I was able to find the Tortilla Soup Mix but none of my local stores carried the white chicken chili mix. I finally decided to order it on Amazon. McCormick’s is the one I used for this recipe (no affiliation).
Some tortilla soup mixes call for 7 cups of water and others call for 8 cups. The important thing here to remember is we are going to use half water and half chicken broth.
Since the mix I purchased called for 8 cups of liquid, I am going to use 4 cups (32 ounces) of chicken broth and 4 cups of water.
Gather your Ingredients
You will need the following ingredients to make this Chicken Tortilla Soup recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Tortilla Soup Mix – I used a 7.9-ounce package from Bear Creek (no affiliation)
- Low Sodium Chicken Broth – regular chicken broth is an option
- White Chicken Chili Seasoning Mix – I use McCormick’s brand (no affiliation)
- Navy Beans / White Beans
- Diced Tomatoes with Green Chilies – or regular diced tomatoes if you want
- Green Chilies
- Sweet Corn
- Rotisserie Chicken – you can also use a couple of cooked chicken breasts chopped up
How to Make Chicken Tortilla Soup
- In a large pot, over medium heat, combine the tortilla soup mix with the chicken broth and water.
- Add the rest of the ingredients and let simmer to allow the flavors to blend.
- Approximately 15 minutes before you are ready to serve, add the chicken.
- Serve and optionally garnish with crushed tortilla chips, shredded cheese, tomatoes, sour cream, cilantro, and chopped avocado.

Instructions
- In a large pot, over medium heat, combine the tortilla soup mix with the chicken broth and water.
- Add the rest of the ingredients and let simmer to allow the flavors to blend.
- Approximately 15 minutes before you are ready to serve, add the shredded chicken.
- Serve and optionally garnish with crushed tortilla chips, shredded cheese, tomatoes, sour cream, cilantro, chopped avocado.
