If you are not familiar with bruschetta it’s basically an Italian appetizer that consists of toasted bread with some diced tomatoes and seasonings like olive oil, garlic basil and/or parsley.

While it’s not necessary to chill the tomato mixture in the fridge for an hour before using, I do recommend it. This will give all the ingredients a chance to meld together.

Italian Parsley and Flat-Leaf Parsley are basically the same thing. Grocery stores may use either name.

You will need the following ingredients to make this Copycat Bruschetta recipe from the Cheesecake Factory (see recipe card for quantities): Roma Tomatoes, Red Onion, Garlic Cloves, Fresh Basil, Olive Oil, Red Wine Vinegar, Salt, Ground Black Pepper, French Bread, Garlic Salt and Fresh Italian Parsley.

  1. In a mixing bowl, combine the chopped tomatoes, onion, garlic and basil. Add about 1/2 tablespoon of olive oil, red wine vinegar, salt and pepper. Mix until well combined. Cover the bowl and refrigerate for at least an hour.
  2. Preheat the broiler, slice the bread into 1-inch slices diagonally to make 6 – 7 slices.
  3. Combine the remaining 1 1/2 tablespoons of olive oil with the garlic salt. Brush each slice with the olive oil mixture.
  4. Broil the bread slices until the surface starts to brown.
  5. Arrange the bread on a plate. place some of the tomato mixture in the middle of each slice of bread. Garnish with some Italian parsley.

Ingredients
 

  • 1 ½ Cups Roma Tomato, chopped
  • 2 Tbsp Red Onion, diced
  • 1 Garlic Cloves, minced
  • 2 Tbsp Fresh Basil, chopped
  • 2 Tbsp Olive Oil
  • ½ Tsp Red Wine Vinegar
  • ¼ Tsp Salt

  • ½ loaf French Bread
  • ¼ Tsp Garlic Salt
  • 2 sprigs Fresh Italian Parsley

Instructions
