If you are looking for a non-meat alternative the next time you make tacos, you must try this Delicious Lentil Taco recipe. Not only super easy to make but also healthy!

Lentils can be beneficial for heart health as they contain fiber, folic acid, and potassium. Lentils also contain essential vitamins, minerals, and fiber for your diet.

If you are not sure how to cook lentils, rinse the lentils with water then place them in a saucepan with enough water to cover the lentils by 2-3 inches. Bring to a boil, then reduce heat to medium and let simmer until tender, about 25-30 minutes.

Since this Lentil Taco recipe calls for 2 cups of cooked lentils. You will need approximately 1 cup of dry lentils to yield the 2 cups of cooked lentils. Usually, lentils double in size once cooked.

I suggest a white onion for this taco recipe but you can use a different kind of onion if it’s more convenient for you. Here’s an article on Choosing the Right Onion that might help as well.

As with most taco recipes that I publish, the toppings listed on the recipe card are some of my favorites. You can use some, none or all of them. Use whatever sounds good to you!

For planning purposes, you should plan for two tacos per person. Each taco will have approximately 2 ounces of meat plus toppings. For reference, one pound of ground beef will yield about 14 ounces once cooked.

You will need the following ingredients to make this Delicious Lentil Tacos recipe (see recipe card for quantities): Lentils, White Onion, Olive Oil, Garlic Cloves, Vegetable Broth, Chili Powder, Garlic Powder, Onion Powder, Dried Oregano, Crushed Red Pepper Flakes, Paprika, Ground Cumin, Sea Salt, Ground Black Pepper and Tortillas. Optional ingredients include: Shredded Lettuce, Jalapeños, Guacamole, Mexican Blend Cheese and Sour Cream.

  1. Cook the lentils according to the directions on the package. Set Aside.
  2. In a skillet over medium-high heat, heat the olive oil. Add the onions and cook for 4-5 minutes stirring frequently until the onion is translucent.
  3. Add the garlic and all the spices and cook for another minute, stirring frequently.
  4. Add the lentils and vegetable broth and stir to combine. Use a potato masher to gently mash the lentils until they start to look like ground meat. Cook another few minutes until hot.
  5. Place a spoonful or two into the warmed corn tortillas and optionally garnish with your favorite taco toppings.

  • 2 Cups Lentils, cooked

  • ¼ Tsp Garlic Powder

  • 1 tsp Ground Cumin
  • 1 Tsp sea salt
  • 1 Tsp Ground Black Pepper
  • ¼ Cup Vegetable Broth
  • 10 Tortillas, corn or flour
Toppings (Optional)
  • Lettuce, shredded
  • Fresh Jalapeño
  • Guacamole
  • Mexican Blend Cheese
  • Sour Cream
