One of my favorite types of side salads is macaroni salad. You all know how much I love making copycat recipes so making this Delicious Copycat KFC Macaroni Salad was a win-win for me.

EDIT: Several of you were quick to point out that KFC no longer offers Macaroni Salad. Apparently, they removed it from their menu many years ago.

When I do eat KFC I usually get their coleslaw. Not sure why. Maybe habit? Well I need to break that habit as their macaroni salad is off the hook.

Too bad they no longer offer it. If you haven’t had it yet, don’t worry. Now you can make it in your very own kitchen.

The great thing about coleslaw recipes is how simple they are to make. Especially a coleslaw like this one that doesn’t require you to shred a bunch of cabbage!

You will need the following ingredients to make this Copycat Macaroni Salad recipe from KFC (see recipe card for quantities): Macaroni, Celery Stalks, Carrots, Yellow Onion, Sweet Pickles, Miracle Whip, Mayonnaise, Black Pepper, Dry Mustard, White Sugar and Salt.

  1. Cook the macaroni al dente to package directions, drain well and let cool.
  2. In a mixing bowl, combine the remaining ingredients and mix well.
  3. Fold the wet mixture into the macaroni and toss to combine.
  4. Cover and let chill for several hours before serving

  • Bowl for Mixing
  • Saucepan

Ingredients
 

  • 15 oz Pasta
  • 2 Celery Stick, finely minced
  • ¼ Cup Carrots, thinly diced
  • 1 Tbsp Yellow Onion, minced
  • Cup Sweet Pickles, diced
  • 1 ½ cups Miracle Whip
  • ½ cup Mayonnaise
  • ¼ Tsp Ground Black Pepper
  • ¼ Tsp Ground Dry Mustard
  • 1 Tsp White Sugar
  • Salt, to taste

Instructions

Notes

→ Contrary to popular belief, a whole head of celery is called a stalk and a single “stick” from the stalk is called a rib. Since most call a rib of celery “stalk”, I use the term Celery Stick to try and avoid any confusion.

    This macaroni salad is delicious. I am not a fan of real mayonnaise so the ingredient of Miracle whip made this salad just perfect. I had some left over after my family gathering and it was still delicious the next day. I was thinking that maybe next time I make it I will also add some raisins.
