These Delicious Soft Ginger Cookies remind me of a molasses cookie. And it’s no secret that I absolutely love Molasses Cookies. I’ve posted several molasses cookie recipes like my Fat Archie’s and my Soft Molasses Cookies recipe.
These cookies are so good that they may skyrocket to #1 of my all-time favorite cookies to make. A soft moist cookie with a nice hint of ginger. Make sure you refrigerate the dough for a minimum of 2 hours before you bake them!
These soft ginger cookies are perfect for the holiday season or whenever you’re in the mood for a spicy-sweet cookie. For me that is always!
Ingredient Substitution
I often get asked what a good substitute for molasses would be. Not sure if it’s because they don’t have any on hand or simply don’t like the flavor.
You have a few options as far as substitutes go: dark corn syrup, maple syrup, honey or even some dark brown sugar with a little water added to it.
Remember that substituting for one of these ingredients may alter the overall flavor of the cookies.

Gather your Ingredients
You will need the following ingredients to make this Soft Ginger Cookies recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- All Purpose Flour – I mostly use King Arthur but use what you got (no affiliation)
- Baking Soda
- Cornstarch
- Salt – a must for most recipes
- Ground Ginger
- Ground Cinnamon – adds a warm, sweet, and slightly woody flavor
- Ground Cloves – brings a warm, sweet, and intensely aromatic spice
- Unsalted Butter – you can use regular salted butter if you prefer
- Light Brown Sugar – you can also use dark brown sugar
- White Sugar – you can also use any sugar alternative
- Eggs – fresh large eggs as much as possible
- Vanilla Extract – you can use store-bought or my Instant Pot Homemade Vanilla Extract or my Sous Vide Vanilla Extract
- Molasses – A substitute for molasses would be dark corn syrup, brown sugar or honey
How to Make Soft Ginger Cookies
- In a mixing bowl, combine the flour, baking soda, cornstarch, salt, ground ginger, ground cinnamon and ground cloves. Set aside.
- In a separate bowl, cream together the butter and sugars. Beat in the egg until thoroughly combined. Mix in the vanilla extract and molasses.
- Gradually add the flour mixture to the butter mixture, stirring just until combined.
- Wrap the cookie dough in plastic wrap and refrigerate for at least 2 hours.
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper. Use a cookie scoop to form the dough into a ball, and then roll the ball in the white sugar. Place on the prepared baking sheet.
- Bake for 10 to 11 minutes being careful not to overbake.
- Let the cookies cool for several minutes on the baking sheet before moving them to a wire rack to cool completely.

- 1 ½ Tsp Ground Ginger

- 1 Cup White Sugar, divided
- 1 Egg
