I love making Sloppy Joes. I’ve published a recipe for Salsa Sloppy Joes, Old Fashioned Sloppy Joe Sliders, and even Turkey Sloppy Joe Sandwiches.

But this time I get to share my recipe for Diabetic Sloppy Joe Sandwiches.

I like to use buns or hoagie rolls for my sloppy joe sandwiches. But that is a personal preference. You can use whatever kind of bread you want.

I like to slightly toast the inside of the cut buns so that the bread doesn’t get too soggy. Again, my preference but you do you!

The first time I made this recipe my wife asked what we were going to do with the leftovers since there were only two of us. She didn’t want to have bread 2 nights in a row so she used the meat mixture to make herself some “chili fries”.

Equipment Needed

Equipment can have a big impact on how a recipe turns out. Below are some of my favorite pieces of equipment that I use when making this recipe.

You will need the following ingredients to make this Diabetic Sloppy Joe Sandwiches recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Lean Ground Beef – as lean as you can get
  • Yellow Onion – white or sweet onion would also work
  • Green Bell Pepper
  • Tomato Sauce
  • No Salt Added Tomato Sauce – less sodium is diabetic friendly
  • Ketchup
  • Worcestershire Sauce
  • Chili Powder
  • Ground Black Pepper – freshly ground if possible
  • Garlic Powder
  • Buns – your choice
  1. Cook the ground beef in a skillet until no longer pink. Drain the juices.

  2. Add all the ingredients to the slow cooker. Stir till combined.

  3. Cover and cook on low for 8-10 hours or on high for 3-4 hours.
  4. Serve on your favorite rolls or buns.

Ingredients
 

  • 2 lbs Lean Ground Beef, browned and drained
