I usually keep riced cauliflower on hand so this was a quick & easy recipe to slap together. If you don’t have riced cauliflower on hand, you can either rice your own or just chop some up.

And don’t throw away that bacon grease! Bacon is expensive and the grease is great for making Scrambled Eggs, Grilled Cheese, Popcorn and even hash browns. It can keep up to 3 months if properly stored in the refrigerator.

When I first started researching Keto-friendly recipes, I often noticed that many of them called for “sugar-free bacon”. I had to pause for a moment because I always assumed bacon was sugar-free.

Well, it is if you buy regular bacon but if you are into the fancier kinds of bacon out there, read the label to make sure it’s sugar-free. If you are not following a strict keto diet, you might not care about this.

Tips

  • You do not need to unthaw the priced cauliflower if using frozen!
