  • Lean Ground Turkey – try to use the leanest ground turkey you can to avoid any excess fat
  • Condensed Cream of Chicken Soup – I like to use Campbell’s (no affiliation)
  • Condensed Nacho Cheese Soup – or substitute cheddar soup for less heat
  • Diced Green Chilies – mild or hot, your choice!
  • Corn Tortillas – white or yellow tortillas. Your choice!
  • Shredded Colby Jack Cheese – or your favorite melty cheese

How to Make Green Chili Enchilada Casserole

  1. Preheat the oven to 350ยฐF.
  2. In a skillet, brown the lean ground turkey. Drain any excess fat.
  3. In a mixing bowl, combine the ground turkey, cream of chicken soup, nacho cheese soup, green chilies, salt and pepper if desired.
  4. In a lightly greased 9 x 13 baking dish, layer 6 tortillas, 1/3 of the meat mixture and 1/3 cheese. ending with cheese on top.
  5. Bake for about 30 minutes or until the cheese is melted and bubbling.
