Gather your Ingredients
You will need the following ingredients to make this Gluten-Free Chicken recipe in your Slow Cooker. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Chicken Breasts – depending on their size you might want to cut them
- Yellow Onion – sweet onion or white onions are good substitutes
- Low Sodium Chicken Broth – you can also use chicken stock
- Fresh Ginger – adds a bright, spicy, and slightly sweet flavor with a hint of citrus
- Light Brown Sugar – you can also use dark brown sugar
- Garlic Cloves – Use more to taste if desired
- Salt and Pepper – use freshly ground black pepper if possible
How to Make Gluten-Free Chicken
- Place half the onions in the bottom of the slow cooker. Place the chicken breasts on top of the onions.
- In a bowl, combine the chicken broth, ginger root, brown sugar, and garlic. Pour over the chicken. Top with the remaining onions.
- Cover and cook on low for 6 to 8 hours. Season with a little salt and pepper.
- The chicken is ready when the internal temperature reaches 165ยฐF.
- Optionally brown the chicken in a hot skillet for a few minutes.
