If you’re struggling to find creative ways to use leftover ham and mashed potatoes (other than simply throwing them away), I’ve got a simple recipe that you’ll absolutely love!

These Ham Potato Puffs are simple to make. Besides your leftover ham and mashed potatoes, all you are some buttermilk biscuits, shredded cheese and a couple of spices. These “puffs” actually remind me of my BBQ Beef Muffins.

Cans of refrigerated biscuits typically yield eight biscuits, which is the number of ham potato puffs this recipe will produce. Alternatively, you could roll out the dough to make 12 biscuits, but I prefer the thickness of the biscuit when making eight. It helps keep the mashed potato filling in place.

In addition to serving these as an Appetizer, they also make a perfect grab & go breakfast for when you don’t have time to sit down and eat Breakfast. I also like to serve these with a little side of salsa. Yummy!

You will need the following ingredients to make this Ham Potato Puffs recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Buttermilk Biscuits – you can use regular biscuits if you want
  • Cooked Ham – simply dice the ham into little pieces
  • Mashed Potatoes – if you are using flavored mashed potatoes you may want to leave out the additional spices
  • Cheddar Cheese – you can use any type of cheese you want as long as it melts well
  • Dried Parsley Flakes & Garlic Powder – adds another layer of flavor to the puffs

How to Make Ham Potato Puffs

  1. Preheat the oven to 350°F. Lightly grease a muffin pan and set aside.
  2. Press each biscuit into the bottom and up the sides of each muffin cup.

  3. In a large bowl, combine the diced ham, mashed potatoes, 1/2 cup cheese, parsley and garlic powder.

  4. Spoon about a 1/4 cup into each biscuit. Sprinkle with remaining cheese over each puff.

  5. Bake for 20-25 minutes or until lightly browned and the cheese has melted. Best served warm.
