    ham corn quesadillas

This Ham and Corn Quesadilla is not your traditional quesadilla recipe. When you think quesadilla you think of a bunch of melted cheese on a tortilla.

But what do you do when you have a bunch of leftover ham you need to use before it goes bad? Sure you can freeze it or make soup with it but why not be adventurous and try this gourmet quesadilla recipe?

    🧀 What is a Quesadilla

A quesadilla is a Mexican dish consisting of a tortilla that is filled primarily with cheese, and sometimes meats, beans, and spices, and then cooked on a griddle. Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States. You can read more about it here Quesadilla - Wikipedia.

I often use Mexican Blend Cheese when making my quesadillas but you can substitute for some shredded mozzarella cheese. Whatever cheese you use just make sure it melts really well.

When I told my wife I was making Ham and Corn Quesadillas she gave me one of those looks. Turns out she was pleasantly surprised at how good they were. Not your traditional quesadilla but a good option if you have leftover ham.
