
This Ham and Corn Quesadilla is not your traditional quesadilla recipe. When you think quesadilla you think of a bunch of melted cheese on a tortilla.
But what do you do when you have a bunch of leftover ham you need to use before it goes bad? Sure you can freeze it or make soup with it but why not be adventurous and try this gourmet quesadilla recipe?

What is a Quesadilla
A quesadilla is a Mexican dish consisting of a tortilla filled primarily with cheese, and sometimes meats, beans, and spices, then cooked on a griddle.
Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States. You can read more about it here Quesadilla – Wikipedia.
I often use Mexican Blend Cheese when making my quesadillas but you can substitute for some shredded mozzarella cheese. Whatever cheese you use just make sure it melts really well.
When I told my wife I was making Ham and Corn Quesadillas she gave me one of those looks. Turns out she was pleasantly surprised at how good they were. Not your traditional quesadilla but a good option if you have leftover ham.

Gather your Ingredients
You will need the following ingredients to make this Ham and Corn Quesadillas recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Ham
- Salsa
- Chili Powder – adds a warm, smoky, and mildly spicy flavor
- Sweet Corn
- Flour Tortillas – use a good brand tortilla like Mission or Guerrero
- Mexican Blend Cheese – typically a mix of Cheddar, Monterey Jack, Queso Quesadilla and Asadero cheeses
How to Make Ham and Corn Quesadillas
- In a bowl, combine the ham, salsa, chili powder and corn.
- Spread the mixture over 4 tortillas. Sprinkle the shredded cheese on top of the ham mixture.
- Place the remaining tortillas on top of each prepared tortilla.
- In a large non-stick skillet, cook each quesadilla over medium-high heat for about 2 minutes then carefully flip the quesadilla and cook until light golden brown.
- Cut in wedges and serve with your favorite toppings.

These Ham and Corn Quesadillas are so tasty. The corn adds that special flavour that makes them delicious. They do not take long to make and are ready in no time. Very delicious for lunch or even a snack.
