I probably eat more Mexican Food than any other cuisine. Maybe it’s because I live in California and it seems like every other restaurant offers Mexican food. My wife was in the mood for chicken burritos and since I was out of refried beans, I decided to make some using a bag of Mayocoba Beans I had handy in my Instant Pot Pressure Cooker.
What are Mayocoba Beans
If you are used to making homemade refried beans you know they are usually made with pinto beans. So what are these Mayocoba beans used for this recipe?
The main difference between the two types of beans is the flavor, texture and appearance. Mayocoba beans are a great choice for when you want a lighter, creamier refried bean compared to the more traditional pinto beans.
Ingredient Substitution
Authentic refried beans are almost always made with Lard. But Lard can be difficult to find and/or undesirable for some. Good substitutes include any neutral oils like vegetable, canola, sunflower, or avocado oil work. You can also use Butter or Bacon Fat.
Serving Suggestions
If you’re not sure how to use these delicious refried beans, try them in tacos and burritos, as a dip for tortilla chips, in enchiladas, on tostadas, or even as a base for Mexican pizzas!
Tips
- You can use a potato masher, immersion blender or even a fork to puree the beans. Or if you don’t min the extra dishes you can use a food processor to get the desired consistency.

Gather your Ingredients
You will need the following ingredients to make this Mayocoba Refried Beans recipe in your Instant Pot Pressure Cooker. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Dry Mayocoba Beans – I recommend rinsing them to remove any impurities
- Water – Needed to build pressure in the Pressure Cooker
- Salt – Enhances the flavor of the beans
- Garlic Clove – You can add more to taste if you want
- White Onion – You can also use a sweet onion or yellow onion
- Bay Leaves – Add a little depth and richness to the beans
- Lard – You can substitute for some vegetable or canola oil if you prefer
How to Make Mayocoba Refried Beans
- Rinse beans in a colander to remove any impurities.
- Add the beans, water, salt, garlic, onion, and bay leaves to the Instant Pot Pressure Cooker.
- Seal the lid and cook on high for 45 minutes. Allow the pressure to release naturally.
- In a skillet, melt the lard over medium heat. Remove the bay leaves from the pot and the bean mixture to the Skillet. Mash the beans into a puree.
- Reduce the heat to low and let the beans cook until it has the consistency of a paste. Make sure to stir often to avoid the beans from sticking to the skillet.

- 2 Tbsp Salt
- 1 large Garlic Clove, or more to taste
- ½ White Onion, chopped
- 2 Bay Leaves
- 1 Tbsp Lard
Instructions
