Copycat Taco Bell Mexican Pizza

A super easy Copycat recipe for Taco Bell’s popular Mexican Pizza. Just a handful of simple ingredients and 20 minutes of your time is all you need for this recipe.

My wife asked me to try and replicate Taco Bell’s beloved menu item the Mexican Pizza. She used to eat them all the time back in the ’90s. Looked simple enough to make so I said why not?

Taco Bell first introduced Mexican Pizza in 1985. This fan favorite consists of a crispy tortilla covered with refried beans and ground beef. It’s topped with another tortilla that’s smothered with red sauce, some shredded cheese and chopped tomatoes.

If you don’t have any Taco Bell Hot Sauce on hand and not in the mood to make my Copycat Taco Bell Hot Sauce, you can use an equal amount of Red Enchilada Sauce. In a pinch, you can also use some pizza sauce.

If you think this Mexican pizza is a little too plain and don’t care about deviating from the original taco bell recipe, you can top the pizza with some green onions, jalapeños or any kind of pepper for that matter. A dollop of sour cream might not hurt either.

While you can just use plain ground beef, I strongly recommend you add some taco seasoning to the ground beef. You can either use the pre-packaged taco seasoning or make my Homemade Taco Seasoning Recipe.

Even though Taco Bell has said that their Mexican Pizza will be a permanent item on their menu, I suggest you save this recipe by clicking on the heart just in case they decide to take it off again!

You will need the following ingredients to make this Copycat Mexican Pizza recipe from Taco Bell (see recipe card for quantities): Refried Beans, Roma Tomatoes, Mexican Blend Cheese, Green Onions, Red Enchilada Sauce and Flour Tortillas.

  1. Preheat the oven to 400ºF.
  2. In a skillet, add the ground beef. Cook till slightly brown, Add taco seasoning and water. Cook till no longer pink.
  3. Grease a hot skillet with cooking spray and heat the tortillas, frequently flipping, until nice and crispy. Set aside.
  4. Heat the refried beans so they are warm. Place 2 tortillas on a baking sheet. Spread about 1/2 cup of refried beans onto each tortilla. Top with seasoned ground beef then top each with the remaining tortillas.
  5. Top each of the tortillas with sauce and spread it around.
  6. Add 1/3 cup of cheese on top of each tortilla. Add the chopped tomato on top of the cheese.
  7. Place in oven and cook for about 8-10 minutes, or until cheese is melted.
  8. Let the pizzas cool slightly, then cut in quarters with a pizza cutter.

    This Copycat Taco Bell Mexican Pizza is fantastic. I love this pizza because of the crust on the top and it keeps everything inside, just like a sandwich. Very tasty and delicious.
