    I love loaded baked potatoes. Sour cream, chives, bacon bits & shredded cheese. Yummy! This Loaded Chicken and Potatoes Casserole dish is like one big loaded baked potato with chicken. Great comfort food.

    Loaded Chicken and Potatoes Casserole

    This casserole recipe is super easy to make and will take about 1 hour to bake. But it will be well worth the wait. This casserole is so good you will never look at baked potatoes the same way!

    I enjoy making casseroles. They are usually pretty simple to make but can take time to bake. Like this casserole recipe. There are days where I just don't feel like spending hours in the kitchen and casseroles are the perfect alternative.

    🐓 How to Handle Raw Chicken

    Leave the chicken in the fridge until ready to use.
    Be careful of dripping juices. Clean up immediately.
    Do not wash raw chicken (which prevents cross-contamination).
    Wash all utensils and cutting boards (if applicable).
    If marinating the chicken, make sure you toss the juices before you cook. Don't ever use the juice from the marinade.
    Wash your hands after handling raw chicken.

    And don't throw away that bacon grease! Bacon is expensive and the grease is great for making Scrambled Eggs, Grilled Cheese, Popcorn and even hash browns. It can keep up to 3 months if properly stored in the refrigerator.

    📋 What Ingredients do I need

    You will need the following ingredients to make this Loaded Chicken and Potatoes Casserole recipe: (see recipe card for quantities) Chicken Breasts, Red Potatoes, Olive Oil, Salt, Ground Black Pepper, Paprika, Garlic Powder, Hot Sauce, Fiesta Cheese, Bacon and Green Onions.

    🥣 How to Make Chicken and Potatoes Casserole

    Preheat Oven to 400°F.
    In a large bowl, mix together olive oil, salt, pepper, paprika, garlic powder, and hot sauce.
    Add the cubed potatoes and chicken and stir to coat. Scoop potatoes and chicken into greased 9 x 13 baking dish.
    Bake for 55 to 60 minutes, stirring every 20 minutes.
    Bake until cooked through, crispy and browned. Remove from oven and top with cheese, bacon and green onion. Bake for another 5 minutes until the cheese is melted.

    Ingredients
     

    • 1 lb Chicken Breasts, cubed
    • 8 Red Potatoes, cubed
    • ½ Cup Olive Oil
    • 1 teaspoon Salt
    • ½ teaspoon Ground Black Pepper
    • 1 tablespoon Paprika
    • 2 tablespoon Garlic Powder
    • 1 tablespoon Hot Sauce
    • 2 Cups Fiesta Cheese
    • 1 Cup Bacon, crumbled
    • 1 Cup Green Onions, diced

    Instructions
     

    • Preheat Oven to 400°F.

      This chicken and potato casserole is so tasty. Very easy to make and the aroma in the house while cooking is great. Family loved it, so it’s a keeper.
