I will admit that I never was a fan of sweet potatoes until a few years ago. My wife made me this Yummy Sweet Potato Casserole one Thanksgiving and it has now become a tradition in our family.
One of the beauties of this amazing recipe is that it only requires a handful of ingredients that you probably already have in your pantry. Additionally, it only requires a half-hour of bake time!
Probably the easiest way to cook a sweet potato (or yam) is in the microwave. You need to clean the sweet potato then prick it a few times with a fork then microwave for 8-9 minutes until fork tender.

You will need the following ingredients to make this Sweet Potato Casserole recipe (see recipe card for quantities): Sweet Potatoes, White Sugar, Eggs, Vanilla Extract, Unsalted Butter, Evaporated Milk, Light Brown Sugar, All Purpose Flour and Pecans.
How to Make Sweet Potato Casserole
- Preheat Oven to 350°F.
- In a mixing bowl, combine all potato mixture ingredients and mix well. Pour sweet potato mixture into a greased baking dish.
- Mix all topping ingredients and pour over the potato mixture. Bake for 30 minutes.

SWEET POTATO MIXTURE INGREDIENTS
- 3 Cups Sweet Potatoes, mashed
- 1 Cup White Sugar
- 2 Eggs, beaten
- 1 Tsp Vanilla Extract
- ½ Cup Unsalted Butter, melted
- ⅓ Cup Evaporated Milk
TOPPING INGREDIENTS
- ½ Cup Light Brown Sugar
- ½ Cup All Purpose Flour
- 1 ½ Cup Pecans, chopped
- ½ Cup Unsalted Butter, melted
Instructions
- Preheat Oven to 350°F.
- In a mixing bowl, combine all potato mixture ingredients and mix well. Pour sweet potato mixture into a greased baking dish.
- Mix all topping ingredients and pour over potato mixture. Bake for 30 minutes.
