I will admit that I never was a fan of sweet potatoes until a few years ago. My wife made me this Yummy Sweet Potato Casserole one Thanksgiving and it has now become a tradition in our family.

One of the beauties of this amazing recipe is that it only requires a handful of ingredients that you probably already have in your pantry. Additionally, it only requires a half-hour of bake time!

Probably the easiest way to cook a sweet potato (or yam) is in the microwave. You need to clean the sweet potato then prick it a few times with a fork then microwave for 8-9 minutes until fork tender.

I always wondered what the history was of Sweet Potatoes. Come to find out it’s better known as a Yam. I guess it depends on what part of the country you are in. In any case, check out this interesting article.

You will need the following ingredients to make this Sweet Potato Casserole recipe (see recipe card for quantities): Sweet Potatoes, White Sugar, Eggs, Vanilla Extract, Unsalted Butter, Evaporated Milk, Light Brown Sugar, All Purpose Flour and Pecans.

  1. Preheat Oven to 350°F.
  2. In a mixing bowl, combine all potato mixture ingredients and mix well. Pour sweet potato mixture into a greased baking dish.
  3. Mix all topping ingredients and pour over the potato mixture. Bake for 30 minutes.

SWEET POTATO MIXTURE INGREDIENTS
  • 3 Cups Sweet Potatoes, mashed
  • 1 Cup White Sugar
  • 2 Eggs, beaten
  • 1 Tsp Vanilla Extract
  • ½ Cup Unsalted Butter, melted
  • Cup Evaporated Milk
TOPPING INGREDIENTS
  • ½ Cup Light Brown Sugar
  • ½ Cup All Purpose Flour
  • 1 ½ Cup Pecans, chopped
  • ½ Cup Unsalted Butter, melted

Instructions

  • Preheat Oven to 350°F.
  • In a mixing bowl, combine all potato mixture ingredients and mix well. Pour sweet potato mixture into a greased baking dish.
  • Mix all topping ingredients and pour over potato mixture. Bake for 30 minutes.

    I don’t usually do much cooking, but this recipe is one that I always make. My family loves sweet potatoes and so do I. This casserole is the best I have ever made. I give it a thumbs up.
