This Mexican Taco Mac & Cheese is pure Cheesy Awesomeness! A combination of my two favorite foods, Mexican and Mac & Cheese.
It’s no secret that I love Mac & Cheese. Not the kind you buy in a box but the gourmet variety like this Mexican Taco Mac and Cheese.
I will try any Gourmet Mac and Cheese recipe at least once. Some are better than others and this is one of the better ones I’ve made. This Taco Mac and Cheese combines the best of both worlds. Mexican flavors with Mac & Cheese.
What is Al Dente
When making Mac and Cheese, it’s important to cook the pasta al dente to ensure the best texture possible.
If you are not familiar with the term “al dente”, it means cooking the pasta so it’s still chewy and form and that it will hold its shape when the sauce is added to it.
How to Handle Raw Beef
- Thaw frozen ground beef on a plate on the lowest shelf of the refrigerator, to avoid dripping onto other foods.
- Keep raw and ready-to-eat meats separate.
- Wash hands thoroughly before and after handling raw ground beef. Wash cutting boards, bowls, and utensils used to prepare raw ground beef with hot soapy water and rinse well.
- Use separate plates to carry raw ground beef patties to the cooking area and cooked patties to the serving area.
- Use a Thermometer to ensure Ground Beef Reaches the Safely Cooked Internal Temperature of 160°F.
Ingredient Substitution
For a slightly healthier version of this recipe, you can use Lean Ground Turkey instead of Ground Beef.
Additionally, you can substitute the Mexican Blend Cheese for whatever you want as long as you make sure it is a good melting cheese.

Gather your Ingredients
You will need the following ingredients to make this Mexican Taco Mac & Cheese recipe (see recipe card for quantities): Ground Beef, Macaroni, Yellow Onion, Taco Seasoning, Salt, Black Beans, Sweet Corn, Salsa, Sour Cream and Mexican Blend Cheese.
How to Make Mexican Taco Mac and Cheese
- Preheat oven to 350°F.
- In a skillet over medium-high heat, brown the ground beef and onions with a little bit of olive oil. Drain the grease from the cooked meat.
- Add the taco seasoning, and salt to the meat mixture along with 1/2 cup water. Bring to a boil, then reduce to a simmer and continue to cook for 5 to 6 minutes or until the mixture has thickened.
- In a large mixing bowl, add the ground beef mixture, cooked macaroni, black beans, sweet corn, salsa, sour cream and 2 cups of shredded cheese. Mix thoroughly.
- Add the mixture to a greased 9 x 13 dish and cover with foil.
- Bake for 30 minutes covered.
- Remove the foil and add the remaining cheese. Bake for another 15 minutes uncovered.

- 1 Cup Yellow Onion
- 2 Tbsp Taco Seasoning
- 2 Tsp Salt
- 15 oz Black Beans, rinsed & drained
- 15 oz Sweet Corn, drained
- 8 oz Salsa
- 8 oz Sour Cream
- 12 oz Mexican Blend Cheese, shredded
