    celebration chicken with rice

When I first saw this recipe for Mister Bumbles Celebration Chicken, I couldn’t help but laugh out loud. Who is Mister Bumbles and what is he celebrating? If you happen to know, please let me know in the comments below.

    chicken pieces in sauce

Whatever it is, this is a super simple chicken dish you can whip together on a weeknight as long as you have 50 minutes to spare while it bakes in the oven.

The original recipe took a slightly different approach for the sauce but I decided to put my spin on it. In the end, the result was a savory, moist chicken dish that you can serve on a bed of rice or noodles or even in a taco!

🐓 How to Handle Raw Chicken

Leave the chicken in the fridge until ready to use.
Be careful of dripping juices. Clean up immediately.
Do not wash raw chicken (which prevents cross-contamination).
Wash all utensils and cutting boards (if applicable).
If marinating the chicken, make sure you toss the juices before you cook. Don't ever use the juice from the marinade.
Wash your hands after handling raw chicken.

For the baking dish, a 9 x 13 will be more than enough to cook the chicken but depending on the type of dish you have and how small you dice the chicken you might be able to get away with a regular 9-inch baking dish.

This recipe is so easy to make. As I am a single person, I cut this recipe in half.. it turned out perfect and used 2 chicken breasts. They turned out perfect. Very moist and delicious. I had one the first night and reheated the second one the night after for dinner. It was still moist the second night. I will certainly ask this quick dinner again.

What is meant by beef bouillon…2 tbsp of the powder? Or 2 tbsp of the prepared liquid? Or…

You can use cubes or powder. Whatever you have on hand. You can adjust the quantity to your liking as well. I always have a jar of better than bouillon beef on hand so I often use that.
