
After a long stressful week, I was looking for an easy recipe to make for dinner. I narrowed it down to making something in my Instant Pot or my Slow Cooker. I decided to make Mom’s Slow Cooker Chicken Dinner.
Nothing fancy about this Slow Cooker Chicken Dinner. A handful of ingredients you most likely already have on hand and 4 hours in your slow cooker and you have a super flavorful chicken dinner. The perfect comfort food.
You have two options when it comes to cooking this recipe in your slow cooker, 8 hours on low or 4 hours on high. Pick the one that best fits your schedule.
💭 Ingredient Substitution
Instead of the Cream of Chicken Soup, you can use a Cream of Celery or even a Cream of Mushroom soup. Once I even used a can of Condensed Cheddar Cheese Soup and it turned it pretty good!
An alternative to using chicken broth is Better Than Bouillon. I often use it when I don't have broth on hand.
Try to resist as much as possible the temptation to open the lid while it's cooking as the slow cooker loses heat. By just opening the lid to stir the contents can make the internal temperature drop by 10°F to 15°F.
🐓 How to Handle Raw Chicken
Leave the chicken in the fridge until ready to use.
Be careful of dripping juices. Clean up immediately.
Do not wash raw chicken (which prevents cross-contamination).
Wash all utensils and cutting boards (if applicable).
If marinating the chicken, make sure you toss the juices before you cook. Don't ever use the juice from the marinade.
Wash your hands after handling raw chicken.
The USDA recommends an internal temperature of 165°F when cooking chicken. I always use a thermometer to check the internal temperature of meats to ensure it is safe to eat.

🥣 How to Make Mom’s Slow Cooker Chicken Dinner
In a small bowl, mix together the cream of chicken soup, dijon mustard, chicken broth, garlic, basil and pepper. Pour into the slow cooker.
Add the potatoes and onions to the slow cooker and stir to coat them into the sauce.
Arrange the chicken breasts on top of the vegetables. Cover & Cook on low for 8 hours or on high for 4 hours or until the potatoes are tender.
