Pepper Jack Beer Bread

This is a simple recipe for Pepper Jack Beer Bread. Takes only 1 hour to make as it contains so yeast except that from the beer.
I love making bread, especially when they are as easy to make like this Pepper Jack Beer Bread. Just a little over an hour and you have a delicious and flavorful bread to serve your guests.
What I especially love about this particular bread recipe is that it does not call for any yeast (it’s in the beer) so no kneading, rising or proofing is required. This means much less time to prepare.
How to Roast Bell Pepper
If you need the roast your own bell pepper because you can’t find any in a jar, this is what I like to do. I roast the bell pepper over an open flame until it is well charred. And I mean well charred.
I then put it in a bowl and cover it for about 20 minutes. This will allow it to sweat. I then cut off the stem and run it under water to remove the blackened skin and seeds. You can then cut to the desired size.

What kind of Beer
What kind of beer you use is totally up to you. I recommend something light, like a pale ale. Using a Stout Beer or Porter might not play nicely with the rest of the ingredients in this bread recipe. Remember, cheaper is probably better this time around.

Gather your Ingredients
You will need the following ingredients to make this Pepper Jack Beer Bread recipe (see recipe card for quantities): All Purpose Flour, Baking Powder, Salt, Monterey Jack Cheese, Red Bell Pepper, Honey, Unsalted Butter and Beer.
How to Make Pepper Jack Beer Bread
- Preheat the oven to 375ºF. Lightly grease a loaf pan with cooking spray and set aside.
- In a medium bowl, whisk together the all purpose flour, baking powder and salt. Add in the cubed cheese and diced peppers and stir until well blended.
- In a small saucepan over medium heat, stir together honey and 1/4 cup butter until the butter is melted, stirring occasionally. Make sure you don’t burn it!
- Add the melted butter to the flour mixture. Pour in the beer and mix until well blended. Transfer the batter to the prepared loaf pan, spreading evenly.
- Bake for 1 hour or until a toothpick comes out clean. Brush loaf with the remaining 1 tablespoon of melted butter. Let the loaf cool before slicing and serving.

- 1 Tbsp Baking Powder
- 1 ½ Tsp Salt
- 3 oz Monterey Jack Cheese, finely cubed
- ½ Cup Red Bell Pepper, roasted & finely diced
- 2 Tbsp Honey
- ¼ Cup Unsalted Butter, + 1 tbs, softened, divided
- 12 oz Beer

I like beer bread a lot, but have only made an enhanced version of the basic recipe (my own enhancements, nothing found anywhere else).
But this…this is something I never thought to try, even with 63 years of bakng and cooking experience under my belt (Dad taught me when I was 8, and Mom happily gave me the kitchen from then on), so it’s on my baking list as soon as this hot weather (MO in mid September) cools down!
