Pepperoni Pizza Potato Skins

I like my potato skins to be crispy on the outside, soft and cheesy on the inside. To achieve this, once I clean the outside of the potatoes, I rub a little olive oil on them and sprinkle some salt then bake them for about 1 hour at 400°F.

If you are in a hurry you can cook the potatoes in the microwave. After you wash them, prick each potato a few times with a fork and microwave on high for 8-12 minutes.

You can sprinkle some crushed red pepper flakes or even some minced garlic on the cooked potato skins. Instead of turkey pepperoni, you can use regular pepperoni or even some cooked bacon.

I like to serve this pizza potato skins with a side of pizza sauce for dipping. You can also serve these skins with a side of my Homemade Ranch Dressing.
