
I was looking for something different to put on my burger the other day and came across this recipe for Pimiento Cheese Sauce from celebrity chef Rachael Ray.
As I would expect from any recipe she publishes, this sauce is really amazing. And not only that, it's super easy to make which I also like. Since it only takes 10-15 minutes to make, you can make it while the burgers are on the grill cooking.
Have you ever wondered why some restaurants (not fast food places) put the lettuce under the burger pattie instead of on top? It prevents the bottom bun from getting greasy.
This is especially useful if you like your burgers medium-rare as I do. I hate eating a soggy bun with my hamburger.
This cheese sauce is not only great on burgers but I think it would be great on Hot Dogs and even on a hot sandwich. I'm going to have to experiment a little next time I decided to make this cheese sauce.
Whenever I make a recipe that calls for cheddar cheese I almost always use sharp cheddar cheese. Like I always say, use what you got on hand.
You can use mild, medium or even extra sharp cheddar cheese if that is what you have on hand. One of these days I might make this pimiento cheese sauce recipe with White Cheddar.
Whenever you melt cheese like this, you run the risk of the cheese congealing or clumping. Several factors can cause this including the amount of heat used and the type of cheese you use.
For example, shredding your own cheese is usually better than using the pre-shredded kind as the latter contains additives that can cause the melted cheese to congeal.
All of this to say you might want to use it immediately or keep the pimiento cheese sauce from Rachael Ray on low heat until you use it.

In a saucepan over medium heat, melt the butter. Whisk in the all purpose flour and cook for 1 minute.
Add the milk and bring to a boil whisking regularly. Cook until the mixture has thickened. Salt and pepper to taste.
Add the sharp cheddar, hot sauce, mustard and pimientos and whisk until melted.

- 1 Cup Milk
- 1 Cup Sharp Cheddar Cheese, shredded
- 1 tablespoon Yellow Mustard
- ⅛ teaspoon Hot Sauce, or more to taste
- 3 tablespoon Pimientos, diced & drained
