My love for Salmon continues. I love a nice Salmon steak baked in the oven but I was looking to experiment with different types of salmon recipes.

I was also looking for a light recipe as I was not in the mood for a heavy meal. That’s where these awesome Salmon and Potato Patties recipe comes into play.

I’ve seen salmon patties made a few different ways. My mother-in-law used sour cream in hers. Unfortunately, I haven’t had a chance to try hers yet so I can’t compare them to these salmon and potato patties.

I decided to use mashed potatoes in mine to give the patties a nice consistency along with a few veggies for flavor.

My wife pointed out that instead of making “real” mashed potatoes that next time I should try instant mashed potatoes. I’m sure it would work and taste just fine so I might take her advice one of the days.

I figured I would throw it out there in the event you don’t have any potatoes handy and really want to make this recipe. If you are in the mood for a nice Salmon steak, my go-to recipe is my Confetti Salmon Steaks recipe.

You will need the following ingredients to make this Salmon & Potato Patties recipe (see recipe card for quantities): Canned Salmon, Eggs, Russet Potatoes, Green Pepper, Green Onion, Celery, Salt, Ground Black Pepper and Breadcrumbs.

  1. In a medium bowl, mix all ingredients together. Shape the mixture into 8 patties.
  2. Dip patties in dry breadcrumbs, ensuring that both sides are coated.
  3. In a lightly greased non­stick skillet, cook the patties until golden brown on both sides and firm to the touch. About 5 to 6 minutes.

  • 7 oz Canned Salmon
  • 2 Eggs
  • 1 Cup Russet Potatoes, Mashed
  • 2 Tbsp Green Pepper, Minced
  • 1 Green Onion, Minced
  • 2 Tbsp Celery, Finely Chopped
  • ¼ Tsp Salt
  • ¼ Tsp Ground Black Pepper
  • Bread Crumbs

Instructions

  • In a medium bowl, mix all ingredients together. Shape the mixture into 8 patties.

    1. I’ve never frozen mine but I would let them cool completely first then put them in a freezer bag with a piece of parchment or wax paper between each patty so they don’t stick together.

  1. My family just loved this Salmon and Potato Patties. So simple to make. I had leftover mashed potatoes so decided to try this recipe. It turned out better than I had imagined. Very tasty.
