My love for Salmon continues. I love a nice Salmon steak baked in the oven but I was looking to experiment with different types of salmon recipes. I was also looking for a light recipe as I was not in the mood for a heavy meal. That's where these awesome Salmon and Potato Patties recipe comes into play.
I've seen salmon patties made a few different ways. My mother-in-law used sour cream in hers. Unfortunately, I haven't had a chance to try hers yet so I can't compare them to these salmon and potato patties. I decided to use mashed potatoes in mine to give the patties a nice consistency along with a few veggies for flavor.
My wife pointed out that instead of making "real" mashed potatoes that next time I should try instant mashed potatoes. I'm sure it would work and taste just fine so I might take her advice one of the days. I figured I would throw it out there in the event you don't have any potatoes handy and really want to make this recipe. If you are in the mood for a nice Salmon steak, my go-to recipe is my Confetti Salmon Steaks recipe.
