
Not too long ago I bought a case of Rice Noodles to make some Pad Thai. I wanted to try something different with them so made this Szechuan Style Noodles with Turkey recipe.
What I love about cooking with Rice Noodles is that they only take 3 minutes or so to cook in boiling water. A third of the time that regular pasta takes to make and they are healthier for you.
I must tell you ahead of time that this noodle dish is a little on the spicy side. the heat comes mostly from the crushed red pepper flakes and the fresh ginger.
But like many other dishes like this one, you can control the heat by adjusting the amount of red pepper flakes and ginger you add.
Given a choice I like to use ground turkey as much as possible as it's healthier for you than ground beef but you can easily substitute if you want.
Like I always say, use what you got! the only thing I would recommend is using the leanest ground beef you can get your hands on. And make sure you drain as much of the fat as possible.
If you don't shallots on hand, you can substitute for some sweet onions or even some red onions without affecting the overall taste of this delicious rice noodle dish. In a pinch, you could probably even use some green onions.
If you don't have any Sesame Oil on hand you can substitute for one of the following oils: Olive Oil, Canola Oil or even some Avocado Oil.
Just keep in mind that Sesame Oil has a distinct flavor so substituting will change the flavor of this dish.

🥣 How to make Szechuan Style Noodles with Turkey
In a skillet, heat the oil over medium heat. Add the scallions, ginger, garlic, and pepper flakes. Cook, stirring constantly until fragrant, about 1 minute.
Add the ground turkey to the skillet. Cook until the meat is no longer pink, about 5 minutes.
While the turkey is cooking, Place noodles in a medium bowl, cover with boiling water. Let stand until noodles soften, about 3 minutes. Drain and set aside.
To the skillet, stir in the soy sauce, vinegar, and chicken broth. Add the rice noodles and toss to combine.
Optionally garnish with fresh cilantro and serve.

Szechuan Style Noodles with Turkey
Ingredients
- 8 oz Pad Thai Rice Noodles
- 4 tablespoon Sesame Oil
- 3 Scallions, thinly sliced
- 2 teaspoon Fresh Ginger
- 1 Garlic Clove, minced

Instructions

We love this dish and have already made it 3 times in as many weeks. We have used ground chicken as well as ground turkey and it did not alter the taste. It's delicious and easy to make.
