jenni-o turkey breast

When I make this casserole, I like to use a frozen chicken breast from Jennie-O. So much easier than cooking a whole turkey. But if I am making this recipe around the Holidays, I will use leftover turkey if I have any on-hand.

I like to make my mashed potatoes from scratch but in a pinch, instant mashed potatoes work great. For recipes like this one, use whatever you have on hand. If you have canned cranberry sauce on hand, go for it! Or make your own like I do. Whatever works best for you.

The easiest way to make cranberry sauce is to add 1 cup of water and 1 cup of sugar to a saucepan. Heat until most of the sugar has dissolved.

Add a 12 oz bag of fresh cranberries and boil until all the cranberries have popped. I sometimes add a cinnamon stick for a little added flavor.

I would suggest using whatever type of stuffing you use for Thanksgiving dinner. This is a complete Thanksgiving dinner in one delicious casserole!
