Who doesn’t like a good Chicken Salad Sandwich on their favorite bread? I remember my mom making me chicken salad sandwiches when I was young to take to school.
I have to think that chicken salad has been around longer than I have but this is not your typical chicken salad. I experimented with different ingredients and with the help of my royal tasters, I came up with this variation to the classic chicken salad.
This chicken salad is so good that my wife put a scoop of it over a bed of lettuce. This was she could enjoy this delicious chicken salad without the bread!
Personally, I like my chicken salad on a nice hoagie roll but I also like it placed between two pieces of toasted Texas Toast. Sometimes I add a little lettuce & cheese but this salad is so good on its own that I often eat it as-is.
