We love Chicken Salad Sandwiches in our house. I love my go-to Chicken Salad Sandwich recipe but I couldn’t resist making this Cashew Chicken Salad Sandwiches recipe.
This method for making this chicken salad recipe is no different from any other recipe out there. What sets this recipe apart is the ingredients used.
When it comes to cooking the chicken you have a bunch of options. Pan fry it, bake it, BBQ it, pressure cooker, whatever is easiest.
Heck, you can even use some rotisserie chicken in a pinch if you have some on hand or don’t want to cook your own chicken.
Whatever method you prefer just make sure that the internal temperature is 165°F.

You will need the following ingredients to make this Cashew Chicken Salad Sandwich recipe (see recipe card for quantities): Chicken Breasts, Cashews, Red Apple, Cucumber, Mayonnaise, White Sugar, Salt, Ground Black Pepper, Leaf Lettuce and Buns.
How to Make Cashew Chicken Salad Sandwiches
- In a large bowl, combine the chicken, cashews, apple and cucumber.
- In a small bowl, combine mayonnaise, sugar, salt and pepper.
- Add the mayonnaise mixture to the chicken mixture and toss to coat.
- Place a lettuce leaf and 1/2 cup chicken salad on each bun.
