This recipe is a nice twist on a classic sandwich. A perfect blend of tender chicken, crunchy cashews, and crisp cucumbers and apples, all dressed in a flavorful sauce.

We love Chicken Salad Sandwiches in our house. I love my go-to Chicken Salad Sandwich recipe but I couldn’t resist making this Cashew Chicken Salad Sandwiches recipe.

This method for making this chicken salad recipe is no different from any other recipe out there. What sets this recipe apart is the ingredients used.

When it comes to cooking the chicken you have a bunch of options. Pan fry it, bake it, BBQ it, pressure cooker, whatever is easiest.

Heck, you can even use some rotisserie chicken in a pinch if you have some on hand or don’t want to cook your own chicken.

Whatever method you prefer just make sure that the internal temperature is 165ยฐF.

For the bread you can use whatever you prefer. I like to use buns but you can also use sliced bread or even croissants.

If you are trying to avoid carbs as much as you can you can even serve this chicken salad in a lettuce wrap or on a salad.

Equipment Needed

You will need the following ingredients to make this Cashew Chicken Salad Sandwich recipe (see recipe card for quantities): Chicken Breasts, Cashews, Red Apple, Cucumber, Mayonnaise, White Sugar, Salt, Ground Black Pepper, Leaf Lettuce and Buns.

  1. In a large bowl, combine the chicken, cashews, apple and cucumber.
  2. In a small bowl, combine mayonnaise, sugar, salt and pepper.
  3. Add the mayonnaise mixture to the chicken mixture and toss to coat.
  4. Place a lettuce leaf and 1/2 cup chicken salad on each bun.

Ingredients
 

  • 2 Cups Chicken Breasts, diced & cooked
  • ยฝ Cup Cashews, chopped
  • ยฝ Cup Red Apple, chopped
  • ยฝ Cup Cucumber, chopped peeled
  • ยฝ Cup Mayonnaise, or to taste
  • ยฝ Tsp White Sugar
  • ยฝ Tsp Salt
  • โ…› Tsp Ground Black Pepper
  • 6 Leaf Lettuce
  • 6 Buns, split

Instructions
 

  • In a large bowl, combine the chicken, cashews, apple and cucumber.

    This is the first time making this sandwich. The combination of the cashews, chicken and cucumbers made this one of the best sandwiches I had ever made.
