The Perfect White Cake

I love this Perfect White Cake recipe. It’s the perfect base for whatever type of cake dessert you are trying to make. For this recipe, I decided to make this cake layered with my Mixed Berry Filling.

I also went ahead and used my Boiled Cake Icing as a frosting. This combination is out of this world!

The Perfect White Cake

Cake flour is different than all-purpose flour as it has a much lower protein level. Cakes made with cake flour will have a finer, more tender crumb than those made with all-purpose flour.

That being said, in most cases, it is possible to substitute cake flour with all-purpose flour unless the cake is extremely tender (ex. angel food cake).

To use all-purpose flour for 1 cup of cake flour measure out 1 cup all-purpose flour, remove 2 tablespoons of the all-purpose flour and replace it with 2 tablespoons of cornstarch. Whisk together before using.

You will need the following ingredients to make this White Cake recipe (see recipe card for quantities): Cake Flour, Milk, Egg Whites, Almond Extract, Vanilla Extract, White Sugar, Baking Powder, Salt and Unsalted Butter.

  1. Preheat oven to 350°F.
  2. Prepare two 8 inch cake pans.
  3. Pour milk, egg whites, and extracts into a medium bowl and mix with a fork until blended.
  4. In the bowl of your electric mixer, mix cake flour, sugar, baking powder, and salt at slow speed. Add butter, cut into cubes and continue beating on low for about 1­2 minutes.
  5. Pour all but 1/2 cup of milk mixture to flour mixture and beat at medium speed for 1 1/2 minutes. Add the remaining 1/2 cup of the milk mixture and beat for about 1 minute.
  6. Pour batter evenly between two prepared cake pans.
  7. Bake for 27 to 30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow cake to cool to room temperature.
  9. Frost cakes with your favorite frosting.

  • 1 ¾ Cups White Sugar
  • 4 Tsp Baking Powder
  • 1 Tsp Salt
  • 1 ½ Sticks Unsalted Butter, Softened but Cool
  • Frosting
  • Mixed Berry Filling
