This Easy Angel Sherbet Cake recipe comes from my mother-in-law via my spouse. Super easy to make and makes a great dessert that I am sure everyone will love.

One of the reasons why this recipe is so easy to make is that it uses a boxed angel food cake mix and prepared Sherbet. No need to make those two ingredients from scratch for this dessert recipe.

When making this cake recipe you have a couple of options. You can either use a uniquely flavored sherbet for each layer or you can do like I did is use a rainbow sherbet for each layer.

Oh and if you really want to cheat, you can use a premade angel food cake. Sometimes when we are pressed for time you do what you gotta do. I usually have a box of angel food cake mix in the pantry so that's what I use.

The beauty of this cake recipe is that it is so light and flavorful that it makes a perfect dessert for those warm summer nights. I like to make this as a dessert when we are camping during the summer.

To make assembly a lot easier, make sure you let the Sherbet soften a bit. Not too much though as you don't want the cake to get soggy. Just soft enough so it is spreadable and doesn't tear the cake apart.

When cutting the cake I suggest you use a serrated knife so it doesn't tear the cake apart. Doesn't matter if the knife is big or small, just use a sawing motion to cut the cake into layers.

If you are making this cake ahead of time, once you have it cut and the sherbet added to it, I suggest you freeze the cake for a good 3-4 hours. You want it to come together and not get all mushy and fall apart.

When I make the cake ahead of time, I stick it in the freezer as I mention above but wait till it's time to serve before making the glaze and drizzling it all over the top. Just my preference.
