    I love having these Apple Cinnamon Oatmeal Muffins with my coffee in the morning. There's just something about the combination of Apple and Cinnamon that I absolutely love. And these muffins are just like eating a bowl of oatmeal.

    While I pride myself in publishing recipes that use simple ingredients that you almost always have on hand, this muffin recipe might require a visit to your local grocery store.

    Between the Greek Yogurt, Almond Milk and Rolled Oats, you might not have all of those ingredients in your pantry. But trust me, it will be worth the trip to the store. These muffins are delicious!

    💭 Ingredient Substitution

    I like to use Honeycrisp Apples when making these muffins but you can use whatever kind you have as long as they are good for baking. Besides Honeycrisp Apples you can Gala Apples or even some Golden Delicious Apples.

    If you are going to try this recipe, be mindful that the consistency of these muffins will not be like a traditional muffin. This recipe does not call for any flour and uses greek yogurt and honey as a binder for the apples and the oats. If you like eating Apple Cinnamon Oatmeal, you will like this muffin recipe.

    📋 What Ingredients do I need

    You will need the following ingredients to make this Apple Cinnamon Oatmeal Muffins recipe (see recipe card for quantities): Apples, Egg(s), Greek Yogurt, Honey, Vanilla Extract, Rolled Oats, Baking Powder, Salt, Ground Cinnamon and Almond Milk.

    🥣 How to make Apple Cinnamon Oatmeal Muffins

    Preheat oven to 350°F. Line a muffin pan with liners and set aside.
    Peel the skin from the apples and grate on the coarse side of a cheese grater. Set aside.
    In a large bowl, beat the eggs with a whisk until foamy and pale. Add the Greek Yogurt, honey and vanilla extract and whisk until the mixture is thick and well combined.
    Fold in the rolled oats, baking powder, salt, cinnamon, and the grated apple. Pour in the almond milk and continue mixing until everything is well incorporated.
    Pour the batter into 12 muffin tin cups lined with cupcake liners. Top with your choice of toppings.
    Bake for 35-40 minutes until the muffins have set and just started to turn golden brown.

    • 2 Apples
    • 2 Eggs
    • 1 Cup Plain Greek Yogurt
    • ⅓ Cup Honey
    • 2 teaspoon Vanilla Extract
    • 2 ½ Cups Old Fashioned Rolled Oats
    • 2 teaspoon Baking Powder
    • ⅛ teaspoon Salt
    • 1 tablespoon Ground Cinnamon
    • 1 Cup Almond Milk

    Optional Toppings

    • Fresh Blueberries
    • Dried Cranberries
    • Sliced Almonds
    • Raspberries

    Notes

    To help prevent the apples from browning after you've grated them, place them in a bowl and cover with lemon juice and water. Drain thoroughly before adding them to the muffin batter.
