
My wife loves Buffalo Chicken so making a filling for these Calzones was a no brainer. You will be amazed at how easy these calzones are to make.

What is a Calzone
A calzone is pizza dough filled with cheese, meats and vegetables. The dough is baked until golden and the cheese filling is melted and hot. It’s typically served with marinara on the side for dipping.

Recipe Tip
Chicken Tenderloins vary in size. Marinate and cook enough tenderloins to fill 4 large calzones.
Additionally, you may need to use a little more Buffalo Chicken Hot Sauce if you are using more chicken or if you like your Chicken very hot! 🔥

I always have a bottle of Frank’s RedHot Buffalo Hot Sauce in the fridge so that is what I use but you can use whatever brand you prefer or have on hand.

If you prefer smaller calzones, you can cut the pizza dough into 6 or even 8 if you want. The important thing is to properly seal the edges so the filling doesn’t leak out during baking.

Gather your Ingredients
You will need the following ingredients to make this Buffalo Chicken Calzones recipe (see recipe card for quantities): Chicken Tenderloins, Frank’s RedHot Buffalo Wings Sauce, Refrigerated Pizza Dough, Mozzarella Cheese and optionally some Ranch Dressing for dipping.
How to Make Buffalo Chicken Calzones
- Preheat the oven to 425°F.
- Place the chicken tenderloins in a freezer bag and pour 1/2 cup Frank’s RedHot Buffalo Wing Sauce in the bag. Turn to ensure all the pieces of chicken are well coated in the sauce. Refrigerate for at least 3 hours.
- Heat the grill or skillet over medium high heat. Grill the chicken for 8–10 minutes, turning to cook evenly, until cooked through. Discard any remaining marinade.
- Let the chicken cool slightly and cut into bite-sized pieces.
- Unroll the pizza dough onto a large greased cookie sheet. Slice into 4 rectangles (or more for smaller calzones).
- On each piece of dough, sprinkle some cheese, top with some chicken, and optionally drizzle some additional hot sauce.
- Fold each rectangle over to cover the filling and seal the edges with a fork or pinch with your fingers.
- Cut a small slit on the top of each calzone to vent. Brush a little olive oil on top to help with browning. Repeat with the remaining pizza dough.
- Bake for approximately 12 minutes or until the dough is golden brown.
- Let the calzones cool slightly and optionally serve with some ranch dressing for dipping.
