I recently got a panini press as a gift and the first thing I made with it were these Chicken Panini with Lemon Aioli sandwiches.

If you don’t have a panini press no worries. You can fry up this chicken sandwich in a skillet. Simply place something heavy on top of the sandwich to weigh it down.

I’m including a simple lemon aioli recipe as well. I love the combination of lemon and chicken and I think it takes these sandwiches to the next level.
Of course, you don’t have to use the aioli if you don’t want. Simply substitute for another spread like my Sriracha Aioli or use your favorite condiment.

I like to use pre-cooked rotisserie chicken when making sandwiches. So much easier but if you need to, you can cook your own chicken using your preferred method.
The other thing I love about sandwich recipes like this one is that you can easily tweak them to your liking. One of my guests didn’t like red onions so I simply left them out.

You can also substitute just about every ingredient in this recipe. The kind of cheese you use, type of bread and heck you can even use turkey bacon if you want.
