BBQ Pulled Chicken Sandwiches

These BBQ Pulled Chicken Sandwiches are incredibly easy to make thanks to the rotisserie chicken. The Ranch Slaw gives them a nice crunch.

BBQ Pulled Chicken Sandwiches

Whenever I have leftover rotisserie chicken, I like to make these BBQ Pulled Chicken Sandwiches. So easy to make and taste the delicious! Especially with the Ranch Slaw topping.

For the BBQ Sauce, you can make your own or use the store-bought variety. The flavor is also up to you. Pick your favorite and have at it.

Oh and the 1/2 cup quantity is simply a suggestion. Use more or less BBQ Sauce to get the desired consistency.

Personally, I like to use a Brioche Bun when making these sandwiches but you can use whatever you have on hand.

Hamburger Buns, Pretzel Buns or just plain toasted bread. Just keep in mind that this sandwich will be wet so make sure you select your bread carefully.

The Ranch Slaw I include with this recipe is totally optional as well. I just really like this slaw, especially on my Turkey Burgers. For variation, you could top it with a slice of cheese or maybe some Bread & Butter Pickles or even some Pickled Jalapeños.

BBQ Pulled Chicken Sandwiches

You will need the following ingredients to make this BBQ Pulled Chicken Sandwiches recipe (see recipe card for quantities): Rotisserie Chicken, BBQ Sauce, Buns, Milk, Plain Greek Yogurt, Mayonnaise, Ranch Dressing Mix, White Vinegar and Coleslaw Mix.

  1. In a mixing bowl, whisk together the milk, yogurt, mayo, and seasoning. Add in the vinegar and let sit for 5 minutes. Whisk the mixture again then add the coleslaw mix and toss until well combined.
  2. In a separate bowl, mix chicken with barbecue sauce. Make sure there’s enough sauce to coat the chicken, add more sauce if needed.
  3. Toast the buns if desired. Place the chicken on the bottom of the bun. Top the chicken with at least a 1/3 cup of the slaw and place the top bun on the slaw.

Ingredients
 

Ranch Slaw

  • 2 Tbsp Milk, fat-free
  • 2 Tbsp Plain Greek Yogurt, fat-free
  • ½ Tbsp Mayonnaise
  • 1 Tbsp Ranch Dressing Mix
  • â…› Tsp White Vinegar
  • 1 ½ Cups Coleslaw Mix

Instructions
 

Make the Ranch Slaw

    This pulled chicken sandwich is very tasty. My family is not a fan of ranch dressing, but mixed with the yogurt it made a difference and everyone loved it. A 10 in my book.
