
This Cowboy Stew recipe was inspired by a recipe I saw in an old recipe book. I took a few liberties with some of the ingredients to make it my own.

Traditionally, cowboy stew is a one-pot dish that typically includes ingredients like ground meat, beans, tomatoes, corn, potatoes, and various seasonings.
Ingredient Substitution
You can use Lean Ground Beef instead of Ground Turkey for a slightly different flavor profile.
You can also substitute the Ranch Style Beans for some Chili Beans if needed.

Recipe Variation
If you like your food on the spicy side you can add some Chili Powder to the ground meat.
You can also add a little cayenne, paprika or some crushed red pepper flakes when all the ingredients are simmering in the pot
Be careful though, a little goes a long way!

Tips
Some brands of minestrone soup may not have any broth (like Campbell’s) so I recommend adding about a cup of chicken broth or water if you don’t have any. More liquid to taste obviously.
Serving Suggestions
You can serve this delicious Cowboy Stew with some classic Cornbread or try my Spicy Cowboy Cornbread. You can also garnish your stew with a dollop of sour cream or shredded cheese for an extra layer of richness.

Gather your Ingredients

- Lean Ground Turkey – I like to use 93/7 from Jennie-O
- Ranch Style Beans
- Sweet Corn – make sure to drain before using
- Green Chilies
- Diced Tomatoes
- Minestrone Soup
- Salt and Pepper – gives the stew some seasoning
How to Make Cowboy Stew
- In a large pot, brown the ground turkey. Drain any juices if necessary.
- Add salt and pepper to taste. Stir in all the remaining ingredients.
- Let simmer over medium heat for about 30 minutes, or until heated through.
