I love these make ahead Eggs & Bacon Breakfast Burritos. Make a bunch on Sunday to last through the week! Great if you feed a bunch of kids!

I love breakfast burritos. When we go out for breakfast, 9 times out of 10 I will order a Breakfast Burrito. I regularly make them at home so I figured I would share one of my Eggs & Bacon Breakfast Burritos recipes.

What I really like about this recipe is that you can make them ahead of time and store them so when you are in a hurry you can grab one and zap it in the microwave.

I realize this recipe seems pretty basic on the surface but consider it as a starting point. Add peppers, onions or anything else you can think of. I’m just keeping it simple for now so you can build your own favorite breakfast burrito.

I love Bacon so that’s what I decided to use in these burritos. Many prefer sausage in theirs so feel free to substitute and make it your own! Plus I think Bacon might be a little healthier for you. Mind you sausage has more protein. Choose wisely!

Bacon Grease Tip

And don’t throw away that bacon grease! Bacon is expensive and the grease is great for making Scrambled Eggs, Grilled Cheese, Popcorn and even hash browns. It can keep up to 3 months if properly stored in the refrigerator.

If you are making these ahead of time, you have the option of storing them in the fridge or the freezer. I RARELY like to freeze my food but in this situation, it’s fine to freeze them.

If you’ve never rolled a burrito before it might be a little intimidating. There are probably dozens of different ways to roll a good burrito and the internet is full of videos and tutorials so I won’t go into details here.

If the burritos are frozen, place them in the microwave, still wrapped in plastic wrap, and cook for 1 to 1.5 minutes. Let it cool for a minute before removing plastic wrap.
If the burritos were in the fridge, heat them up in the microwave, still wrapped in plastic wrap, for about 30 to 45 seconds.

You will need the following ingredients to make this Eggs & Bacon Breakfast Burritos recipe (see recipe card for quantities): Eggs, Bacon, Potatoes, Cheese and Flour Tortillas.

  1. Cook the potatoes in the microwave on high for 4 minutes or so, until slightly soft. Set aside.
  2. Prepare bacon using your favorite method. Set aside.
  3. In a frying pan, scramble the eggs. Add bacon to the egg mixture and combine.
  4. Combine cubed potatoes with the egg mixture and combine.
  5. Add a few spoonfuls of the egg and bacon mixture to a tortilla. Top with some shredded cheese. Fold into a burrito. Wrap with plastic wrap and store in the fridge or freezer.

Ingredients
 

  • 6 Eggs
  • 1 lb Bacon
  • 3 Cups Frozen Hash Browns
  • 1 Cup Mexican Blend Cheese
  • 8 Medium Flour Tortillas

Instructions
