Mexican Chorizo Breakfast Tacos

These Mexican inspired Chorizo Breakfast Tacos are not only super easy to make but they are also packed full of flavor.

I love Tacos and I love Breakfast so why not combine both and make Breakfast Tacos with some Chorizo?

If you are not familiar with Chorizo, it’s spicy ground pork used in many Mexican dishes. Now while Chorizo tastes great, it isn’t very diet-friendly.

While Chorizo is relatively high in protein, it’s also high in calories, sodium and fat, making it something you shouldn’t consume often if you are trying to lose weight.

When the time comes to warm up your tortillas, you have a few options. You can wrap the tortillas in foil and bake them for 10 minutes at 350°F.

You can also put them in a non-stick pan to heat both sides of the tortilla (this is how I usually do it), heat them over an open flame, or if you must, wrap them in a damp paper towel and microwave them for about 30 seconds.

If you are not a fan of Chorizo you can substitute for some Ground Turkey and feel free to use whatever kind of shredded cheese you want. Consider the toppings suggestions. Use what you like and make these tacos your own!

You will need the following ingredients to make this Mexican Chorizo Breakfast Tacos recipe (see recipe card for quantities): Ground Chorizo, Flour Tortillas, Eggs, Salt, Ground Black Pepper and Monterey Jack Cheese. Optional toppings include: Hot Sauce, Salsa and Fresh Cilantro.

  1. In a skillet, crumble and cook the chorizo until brown over medium-high heat. Transfer the chorizo to a paper towel lined plate to drain any excess fluid.
  2. In a mixing bowl, whisk the eggs, salt, and pepper. Add the egg mixture to the skillet and cook, stirring until the eggs begin to set and just scrambled.
  3. Add the chorizo and continue stirring until the eggs are firm.
  4. Place a warmed tortilla on a plate and sprinkle with some Monterey Jack Cheese. Top with the egg mixture.
  5. Optionally garnish with some hot sauce, salsa and/or fresh cilantro.

Ingredients
 

  • 3 oz Ground Chorizo, or more to taste
  • 4 Flour Tortillas, warmed
  • 4 Eggs
  • ½ tsp Salt
  • ½ tsp Ground Black Pepper
  • 1 cups Monterey Jack Cheese, shredded

Toppings (optional)

  • Hot Sauce
  • Salsa
  • Fresh Cilantro, chopped

    These Mexican Chorizo breakfast tacos are the best way to start your day. I just love them and you can make them up in a jiffy. I even wrapped one up to take to work for my lunch. Great recipe.
