I recently came across this gem of a recipe for Blueberry Compote made in the Instant Pot Pressure Cooker and just had to give it a shot.
I was skeptical of making it in my Instant Pot but since I’ve been super impressed with that appliance, I decided to give it a shot.
The result was a delicious fruit filling with the perfect consistency that can be used over pastries, cheesecake or whatever else you can think of. Heck, I even put it on my toast one morning!
I especially love it on my homemade New York Style cheesecake. I will be posting my recipe soon!
Tips
- You can also make this in a saucepan by adding the blueberry, lemon zest, lemon juice, cinnamon powder, and salt. Cook over medium low heat stirring occasionally until the blueberries burst. Remove from heat and add maple syrup and mix well.
