For the past couple of years, I’ve been on a quest to make every recipe I can in my Pressure Cooker (aka Instant Pot). And next on my list is this Instant Pot Chili Verde recipe.

Chili Verde has to be one of our favorite Mexican Dishes to make at home aside from the usual tacos, burritos and quesadillas. If you are not familiar with Chili Verde, it’s basically a Mexican Pork Stew and is sometimes called a Green Chili.

Since I also love cooking with Tomatillos it was a no brainer for me to make this recipe in my Instant Pot. If you’ve never heard of tomatillos before, they are small green tomatoes with husks.

They are a staple of Mexican Cuisine. I love tomatillos so much that I am in the process of growing a couple of tomatillo bushes in my garden so I have access to fresh tomatillos whenever I want.

The use of Great Northern Beans is a tad unusual for Chili Verde. I personally love them in this recipe but if you are not sure you can either substitute for another kind of white bean, omit them completely and double up on the green chilies or substitute with a can of diced tomatoes.

Equipment Needed

You will need the following ingredients to make this Chili Verde recipe in your Instant Pot Pressure Cooker (see recipe card for quantities): Vegetable Oil, Pork Tenderloin, Yellow Onion, Tomatillos, Garlic Cloves, Ground Cumin, Great Northern Beans, Green Chilies, Salt, Ground Black Pepper and Fresh Cilantro.

  1. Add the vegetable oil to the Instant Pot and press the saute button. Add the pork and cook for about 6 minutes or until browned on all sides, stirring occasionally. Remove to plate.
  2. Add onion to pot; cook and stir 3 minutes or until softened. Add tomatillos, garlic and ground cumin. Cook and stir 3 minutes, scraping up the browned bits from the bottom of the pot. Stir in the beans, green chilies, salt, pepper and pork. Mix well.
  3. Secure the lid and move the pressure release valve to the sealing position. Press manual and cook on high pressure for 8 minutes.
  4. When cooking is complete, use a natural release for 10 minutes, then release the remaining pressure.
  5. Garnish with fresh cilantro and serve with warmed tortillas if desired.

Ingredients
 

  • 1 Tbsp Vegetable Oil
  • 1 lb Pork Tenderloin, cut into 1 inch pieces
  • ½ large Yellow Onion, thinly sliced
  • 1 lb. Tomatillos, husks removed, rinsed and coarsely chopped
  • 6 Garlic Cloves, minced
  • 1 Tsp Ground Cumin
  • 15 oz Great Northern Beans, drained and rinsed
  • 4 oz Green Chilies
  • 1 Tsp Salt
  • ¼ Tsp Ground Black Pepper
  • ¼ Cup Fresh Cilantro, Chopped

Instructions
