
I had some leftover rotisserie chicken that I didn't want to go to waste so decided to make these simple homemade chicken burritos. It really doesn't get much simpler than this.
If you don't have any rotisserie chicken on hand you can simply cook up a couple of chicken breasts and shred them ahead of time. Or even easier just heat up some pre-cooked frozen chicken.
You can also use whatever kind of Bell Pepper you have on hand. I've made this burrito recipe with green, red, yellow and orange bell peppers on many occasions. Use what you got!
You can use whatever kind of rice you want but from a flavor perspective, you probably want to use white rice, brown rice, or even chicken flavored rice.
You don't want to use rice with tons of flavor so as to not compete with all the other ingredients.
It's much easier to roll up tortillas when they are warm. If the tortillas are cold there is a pretty good chance they will crack when you roll them.
🌮 How to Soften Tortillas
When the time comes to warm up your tortillas, you have a few options. You can wrap the tortillas in foil and bake them for 10 minutes at 350°F.
You can also put them in a non-stick pan to heat both sides of the tortilla (this is how I usually do it), heat them over an open flame, or if you must, wrap them in a damp paper towel and microwave them for about 30 seconds.

You will need the following ingredients to make this Simple Homemade Chicken Burritos recipe (see recipe card for quantities): Rotisserie Chicken, Bell Pepper, Salsa, Refried Beans, Cooked Rice and Flour Tortillas.
🥣 How to make Simple Homemade Chicken Burritos
In a lightly greased skillet over medium heat, saute the bell peppers for about 3 minutes. Add the chicken and cook for 1 more minute.
Reduce the heat to low, add ¼ cup of salsa and cook the mixture for 2 minutes, stirring occasionally.
In a microwave safe bowl, combine the refried beans and the remaining ¼ cup salsa. Cover and microwave on high for 2 minutes or until thoroughly heated, stirring after 1 minute.
Spread the bean mixture evenly down the centers of each warmed tortilla. Add some rice on top of the beans. Place the chicken mixture over the rice.
Optionally top with additional ingredients.
Assemble the burrito by folding the right and left side of the tortilla over the meat mixture. Then roll the bottom of the tortilla up over the bottom third of the filling. Fold in the top over the mixture.
