simple homemade chicken burritos

I had some leftover rotisserie chicken that I didn’t want to go to waste so decided to make these simple homemade chicken burritos. It really doesn’t get much simpler than this.

If you don’t have any rotisserie chicken on hand you can simply cook up a couple of chicken breasts and shred them ahead of time. Or even easier just heat up some pre-cooked frozen chicken.

You can also use whatever kind of Bell Pepper you have on hand. I’ve made this burrito recipe with green, red, yellow and orange bell peppers on many occasions. Use what you got!

You can use whatever kind of rice you want but from a flavor perspective, you probably want to use white rice, brown rice, or even chicken-flavored rice.

You don’t want to use rice with tons of flavor to not compete with all the other ingredients.

It’s much easier to roll up tortillas when they are warm. If the tortillas are cold there is a pretty good chance they will crack when you roll them.

When the time comes to warm up your tortillas, you have a few options. You can wrap the tortillas in foil and bake them for 10 minutes at 350°F.

You can also put them in a non-stick pan to heat both sides of the tortilla (this is how I usually do it), heat them over an open flame, or if you must, wrap them in a damp paper towel and microwave them for about 30 seconds.

In addition to the ingredients needed to make this delicious chicken burrito, I am also including a few ideas for additional ingredients to include in the filling: Shredded Cheese, Sour Cream, Black Beans, Guacamole and/or sliced Avocados.

I love chicken burritos, so decided to try this one. I also used a combination of green, yellow and red peppers. The flavour was perfect. Even my picky children loved them.
