There’s nothing better than a fresh muffin with your morning coffee. Especially when it’s Apple Streusel Muffins.

My wife loves a good chocolate muffin with her morning coffee, but for me, I prefer something a little lighter. And this Apple Streusel Muffin recipe fits the bill perfectly.

Apple Streusel Muffins

At first, I can see how it may be a little intimidating to make these muffins as they require a few more steps than a regular muffin.

But it’s really not that difficult. Probably the most difficult part if you’ve never done it before, is cutting the butter into the flour. The trick is to make sure your butter is as cold as possible.

Apple Streusel Muffins

You will need the following ingredients to make this Apple Streusel Muffin recipe (see recipe card for quantities): Unsalted Butter, Light Brown Sugar, Eggs, Vanilla Extract, Cinnamon Applesauce, All Purpose Flour, Baking Soda, Baking Powder, Salt, White Sugar, Ground Cinnamon, Powdered Sugar and Milk.

Preheat oven to 350°F. Line muffin tin with papers
Make the Muffin Batter
In a large mixing bowl, add butter and sugar and beat until light and fluffy. Beat in the egg and vanilla. Stir in the applesauce. Beat in flour and baking soda until just combined. Spoon mixture into the prepared muffin tin, filling 2/3 of the way full.
Make the Streusel
In
a medium bowl, add the sugar, flour, and cinnamon and stir to combine. Add butter and use a fork or pastry cutter to cut the butter into the flour until the mixture is made of coarse crumbs. Sprinkle the mixture evenly over all of the muffin batter.
Bake for 22 minutes or until a tester comes out clean.
Make the Glaze
Once the muffins are cool, whisk together the powdered sugar and milk and drizzle over the tops.

For the Muffins

  • ½ Cup Unsalted Butter

  • Cup All Purpose Flour
  • 1 Tsp Ground Cinnamon
  • ¼ Cup Unsalted Butter, Cold

For the Glaze

  • ½ Cup Powdered Sugar
  • 1 Tbsp Milk
