Awesome Egg Salad Bacon Sandwich

This Awesome Egg Salad Bacon Sandwich recipe is one of my favorite go-to recipes when I am in a hurry to make lunch. Yummy!
I will admit that I am more of a chicken salad sandwich kinda guy, but this Awesome Egg Salad Bacon Sandwich recipe has me hooked! Not sure if it’s the bacon or the cheddar cheese but this combination is yummy!
I realize this recipe doesn’t use the traditional ingredients for an Egg Salad sandwich but the result is a delicious flavorful egg salad. Even my wife who loves Egg Salad said this was her favorite and that I need to make it again.
If you don’t have any Dijon Mustard on hand, don’t worry. You can substitute it with Spicy Brown Mustard or even Classic Yellow Mustard. Use what you got!
My wife prefers her egg salad on a croissant while I prefer nicely toasted Texas toast or Sourdough Bread. The beauty is you can use any type bread you want. Heck, you can even eat right out of the bowl with a spoon!
How to Make Perfect Hard-Boiled Eggs
Now you are probably wondering how to make the perfect hard-boiled egg. Here’s how I like to do it.
Fill a pot with cold water. Add the eggs ensuring they are covered with water. Bring the water to a boil. Turn off the heat and cover and let sit for 13 minutes. Not 12 minutes. Not 14 minutes. 13 minutes.
Remove the eggs from the pot and place them in an ice bath for 5 minutes. This will prevent the eggs from cooking further AND make them easier to peel. Voila!

And don’t throw away that bacon grease! Bacon is expensive and the grease is great for making Scrambled Eggs, Grilled Cheese, Popcorn and even hash browns. It can keep up to 3 months if properly stored in the refrigerator.
Gather your Ingredients
You will need the following ingredients to make this Egg Salad Bacon Sandwich recipe (see recipe card for quantities): Hard-Boiled Eggs, Bacon, Mayonnaise, Dijon Mustard, White Vinegar, Parsley Flakes, Salt, Ground Black Pepper and Cheddar Cheese.
How to Make Egg Salad Bacon Sandwich
- Peel the eggs and mash them finely with a fork. Add the mayonnaise, mustard, vinegar, parsley, salt and pepper and stir to combine.
- While the eggs are cooling, chop the bacon into bite-size pieces and fry until crisp over medium heat. Drain the fat and set it aside.
- Stir in the bacon and cheddar.
- Serve on your favorite bread.

- ½ Cup Mayonnaise
- 1 Tbsp Dijon Mustard
