
I’m always on the lookout for simple recipes to make when I am not in the mood to spend a lot of time in the kitchen. I found this Awesome Quesadilla Pie recipe to make for dinner one night.

Like most recipes, I didn’t care too much for the original so I decided to make some minor changes. I didn’t change the overall flavor profile of the dish but just improved the process.

I’m sure some of you are looking at this recipe and saying to yourselves that this is what some call an “impossible pie”. At least that’s what my wife’s family called a dish like this using Bisquick.

My mom was visiting when I made this recipe and she made a comment that she used to make a similar recipe when I was a kid. Involved Bisquick, Cream of Chicken Soup and diced chicken. I need to pick her brain and make it one of these days.

Bisquick Substitute
If you don’t have any Bisquick on hand, you can make your own by combining 1 Cup All Purpose Flour, 1 1/2 teaspoons Baking Powder, 1/2 teaspoon Salt and 1 tablespoon melted unsalted butter (or vegetable oil).

Gather your Ingredients
You will need the following ingredients to make this Awesome Quesadilla Pie recipe (see recipe card for quantities): Green Chilies, Italian Sausage, Mexican Blend Cheese, Eggs, Milk and Bisquick.
How to Make Awesome Quesadilla Pie
- Preheat oven to 350°F.
- Grease a 9-inch pie pan. Set aside.
- In a bowl, combine green chilies, cooked sausage and cheese. Transfer to the pie pan.
- In a separate bowl, combine eggs, milk and biscuit mix and mix well. Pour over the sausage mixture.
- Bake for 35 minutes or until the center sets.
- Optionally serve with salsa and/or sour cream.

- 1 lb Italian Sausage, cooked & crumbled
- 2 Cups Mexican Blend Cheese, shredded
- 3 Eggs, beaten
- 1 ½ Cups Milk
- ¾ Cup Bisquick
- Salsa, optional
- Sour Cream, optional

This Quesadilla pie is to die for. It only took me 45 minutes to make and it was awesome. Great recipe when you don’t have much time to make dinner. It was a hit with the family.
