🐓 How to Handle Raw Chicken
Leave the chicken in the fridge until ready to use.
Be careful of dripping juices. Clean up immediately.
Do not wash raw chicken (which prevents cross-contamination).
Wash all utensils and cutting boards (if applicable).
If marinating the chicken, make sure you toss the juices before you cook. Don't ever use the juice from the marinade.
Wash your hands after handling raw chicken.
💭 Ingredient Substitution
If you prefer to use something other than the Gouda Cheese, you can substitute for any other type of cheese that melts well. Just keep in mind that the type of cheese you select will alter the flavor of these quesadillas. Mozzarella Cheese would be an easy choice.

📋 Gather your Ingredients
You will need the following ingredients to make this BBQ Chicken Quesadillas recipe (see recipe card for quantities): Rotisserie Chicken, BBQ Sauce, Red Onion, Fresh Cilantro, Gouda Cheese and Flour Tortillas.
🥣 How to make BBQ Chicken Quesadillas
In a mixing bowl, combine shredded chicken with BBQ sauce. Mix well.
In another bowl, toss onion, cilantro, and cheese together.
Lay 4 tortillas on the counter and spread about ⅓ cup of the cheese mixture over each tortilla. Spread 1 cup of chicken over the cheese. Sprinkle another ⅓ cup cheese mixture over top.
Slide one of the cheese-covered tortillas into a lightly greased skillet over medium heat. Place one of the remaining tortillas on top. Press down on the top with a spatula to remove any air pockets. Cook for 1 to 2 minutes until the bottom tortilla is crisp and browned.
Turn the quesadilla over and cook for another 1 to 2 minutes or until lightly browned.
Repeat this process for the remaining quesadillas. Cut into wedges and serve with extra BBQ sauce immediately if desired.

Ingredients
- 1 lb Rotisserie Chicken, cooked & shredded
- ⅓ Cup BBQ Sauce
- ½ Cup Red Onion, finely diced
- ¼ Cup Fresh Cilantro, chopped
- 12 oz Gouda Cheese, grated
- 8 Flour Tortillas
Optional
- Sour Cream
- Salsa
- Quesadilla Dipping Sauce
Instructions
