Quesadillas are probably the easiest thing to make. And these BBQ Chicken Quesadillas are no different. They are also delicious to boot!
Some shredded BBQ Chicken, Cheese and Onions between flour tortillas. How easy is that? Within 5 minutes you have a delicious Gourmet Quesadilla!
Ingredient Substitution
If you prefer to use something other than the Gouda Cheese, you can substitute it for any other type of cheese that melts well. Just keep in mind that the type of cheese you select will alter the flavor of these quesadillas. Mozzarella Cheese would be an easy choice.
What is a Quesadilla
A quesadilla is a Mexican dish consisting of a tortilla filled primarily with cheese, and sometimes meats, beans, and spices, then cooked on a griddle.

Gather your Ingredients
You will need the following ingredients to make this BBQ Chicken Quesadillas recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Rotisserie Chicken – you can also use a couple of cooked chicken breasts chopped up
- BBQ Sauce – you can use store-bought or one of my BBQ Sauce Recipes
- Red Onion – if you must, you can substitute for a yellow onion
- Fresh Cilantro – Also optional as I know many people can’t stand the taste of cilantro
- Gouda Cheese
- Flour Tortillas – use a good brand tortilla like Mission or Guerrero
How to Make BBQ Chicken Quesadillas
- In a mixing bowl, combine shredded chicken with BBQ sauce. Mix well.
- In another bowl, toss onion, cilantro, and cheese together.
- Lay 4 tortillas on the counter and spread about 1/3 cup of the cheese mixture over each tortilla. Spread 1 cup of chicken over the cheese. Sprinkle another 1/3 cup cheese mixture over top.
- Slide one of the cheese-covered tortillas into a lightly greased skillet over medium heat. Place one of the remaining tortillas on top. Press down on the top with a spatula to remove any air pockets. Cook for 1 to 2 minutes until the bottom tortilla is crisp and browned.
- Turn the quesadilla over and cook for another 1 to 2 minutes or until lightly browned.
- Repeat this process for the remaining quesadillas. Cut into wedges and serve with extra BBQ sauce immediately if desired.

These BBQ chicken quesadillas are fantastic. Very tasty. The Gouda cheese gives it just the right flavour.
