Dill Pickle Bacon Grilled Cheese

This one is for all you dill pickle lovers. I’m always looking for different ways to use dill pickles in my recipes. I’ve made Dill Pickle Meatloaf, Mini Dill Pickle Egg Rolls and Dill Pickle Soup. So why not try a Dill Pickle Bacon Grilled Cheese?

This grilled cheese recipe is a breeze to make, especially if you use pre-cooked bacon and dill pickle slices or chips. Of course, you can cook your own bacon and slice your own dill pickles, but it’ll take a bit longer before you can enjoy these delicious grilled cheese sandwiches!

Dill Pickle Bacon Grilled Cheese

As you can see I used a combination of cheddar cheese and shredded Swiss cheese for this recipe but you can easily substitute for any cheese you want. I know some people don’t care for the taste of Swiss cheese so you have options with this grilled cheese recipe!

The only thing I will caution you about if you are going to use different types of cheese is just to make sure you use a good meltable cheese. Believe it or not, not all cheeses will give you that ooey-gooey texture we all want for our grilled cheeses.

If you don’t feel like cooking bacon just for this recipe you can use precooked bacon. Simply warm it up in the microwave and chop it up. You probably won’t even taste the difference.

And don’t throw away that bacon grease! Bacon is expensive and the grease is great for making Scrambled Eggs, Grilled Cheese, Popcorn and even hash browns. It can keep up to 3 months if properly stored in the refrigerator.

You will need the following ingredients to make this Dill Pickle Bacon Grilled Cheese recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Bacon – cook using your favorite method or use pre-cooked bacon
  • Slices of Bread – I often use Texas Toast but you can use any type of bread you want
  • Unsalted Butter – you can also use mayonnaise if you want
  • Dill Pickles – you can slice your own or use dill pickle chips
  • Swiss Cheese – you can substitute for any good melting cheese you prefer
  • Cheddar Cheese – while you can substitute for another cheese, what’s a grilled cheese without some cheddar?
  1. Cook the bacon using your preferred method. Drain the bacon on a paper towel.
  2. Butter each slice of bread on one side only with butter or mayonnaise if using.
  3. Place the bread butter-side down on a hot skillet. Top with the cheddar cheese slices, bacon, dill pickle slices, and swiss cheese.

  4. Top with the second slice of bread, butter side up.

  5. Cook over medium-low heat, flipping halfway until the bread is toasted and the cheese is melted.

  • 2 slices Slices of Bread
  • 1 Tbsp Unsalted Butter
  • 4 slices Dill Pickles
  • 2 slices Swiss Cheese
  • 2 slices Cheddar Cheese
