
Seems like we are always busy these days so here is a quick & easy recipe for Pumpkin Cupcakes!
After making a batch of my delicious Pumpkin Chocolate Granola I found myself with some extra pumpkin puree so I made these cupcakes.

Recipe Variation
Chocolate lovers can add a cup or so of chocolate chips to the batter before baking. I love the combination of pumpkin and chocolate.

Since I love pumpkin chocolate flavor I decided to use chocolate frosting for these delicious cupcakes.
Feel free to use whatever flavor of frosting you want. A nice cream cheese frosting would pair really well with these pumpkin cupcakes.

Gather your Ingredients
You will need the following ingredients to make this Pumpkin Cupcake recipe (see recipe card for quantities): Spice Cake Mix, Eggs, Pumpkin Puree, Water and Frosting.
How to Make Pumpkin Cupcakes
- Preheat the oven to 350°F. Lightly grease a muffin pan or use paper liners. Set aside.
- In a mixing bowl, combine the spice cake mix, eggs, pumpkin puree, and water and mix with a hand mixer.
- Fill each muffin cup 2/3 full. Bake for 15 to 17 minutes or until a toothpick comes out clean.
- Let the muffins cool in the pan for a few minutes then move to a wire rack to cool completely.
- Frost the cupcakes with your favorite frosting.
