Seems like we are always busy these days so here is a quick & easy recipe for Pumpkin Cupcakes! After making a batch of my delicious Pumpkin Chocolate Granola I found myself with some extra pumpkin puree so I made these cupcakes.
Recipe Variation
Chocolate lovers can add a cup or so of chocolate chips to the batter before baking. I love the combination of pumpkin and chocolate.
Since I love pumpkin chocolate flavor I decided to use chocolate frosting for these delicious cupcakes. Feel free to use whatever flavor of frosting you want. A nice cream cheese frosting would pair really well with these pumpkin cupcakes.

You will need the following ingredients to make this Pumpkin Cupcake recipe (see recipe card for quantities): Spice Cake Mix, Eggs, Pumpkin Puree, Water and Frosting.
How to Make Pumpkin Cupcakes
- Preheat the oven to 350°F. Lightly grease a muffin pan or use paper liners. Set aside.
- In a mixing bowl, combine the spice cake mix, eggs, pumpkin puree, and water and mix with a hand mixer.
- Fill each muffin cup 2/3 full. Bake for 15 to 17 minutes or until a toothpick comes out clean.
- Let the muffins cool in the pan for a few minutes then move to a wire rack to cool completely.
- Frost the cupcakes with your favorite frosting.
