These Mini Greek Pizzas are not only quick and easy to make but they are also super delicious! Also a bit healthier than many other pizzas out there!

The Pita Bread really crisps up nicely in the oven so if you are a fan of a crispy crust for your pizza, then this one is for you. And the beauty is you can easily make these on a busy weeknight as they take less than 25 minutes to make.

If you like your pizza to have soft gooey cheese, this pizza recipe might not be for you as feta cheese does not melt. It will soften but it will not melt while baking.

I always have frozen spinach in my freezer so that is what I use but if you have fresh spinach onhand feel free to use it! The end result will be the same.

Since the feta cheese will not melt like a mozzarella cheese it may be a little challenging for you to tell when they are ready to come out of the oven.

I suggest you keep an eye on the pita bread instead of the cheese. The pitas will be slightly brown when the pizzas are ready.

You will need the following ingredients to make this Mini Greek Pizzas recipe (see recipe card for quantities): Greek Pocketless Pita Bread, Ricotta Cheese, Garlic Powder, Frozen Chopped Spinach, Tomatoes, Feta Cheese and Dried Basil.

  1. Preheat the oven to 400°F. Place the pita breads on a baking sheet.
  2. In a small bowl, combine the ricotta cheese and garlic powder. Spread evenly over each pita bread.
  3. Top each pita bread with spinach, sliced tomatoes, feta cheese and basil.
  4. Bake for 12 to 15 minutes or until bread is lightly browned.

  • 4 Greek Pocketless Pita Bread

  • ½ tsp Garlic Powder

  • 2 medium Tomatoes, chopped
  • ¾ cup Feta Cheese, crumbled
  • ¾ tsp Dried Basil

    This mini greek pizza was just the right size for me. I am not a fan of ricotta cheese but decided to try the recipe. It was very tasty especially with the tomatoes.
