A Delicious Pepperoni Pizza Style Quesadillas Recipe. Super easy to make and ready in a little over 10 minutes!
I love making pizza but I was feeling a little lazy one day so decided to make these Pepperoni Pizza Style Quesadillas.

What is a Quesadilla
A quesadilla is a Mexican dish consisting of a tortilla filled primarily with cheese, and sometimes meats, beans, and spices, then cooked on a griddle.
Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States. You can read more about it here Quesadilla – Wikipedia.
One of the main differences between this quesadilla recipe and your typical quesadilla recipe is that these quesadillas are baked in the oven instead of fried in a skillet.
I suppose you can make these quesadillas in a skillet but I prefer this quesadilla recipe baked in a conventional oven or toaster oven.
Ingredient Substitution
I always have mozzarella cheese in the fridge so I usually default to using that when making quesadillas but you can use basically any kind of cheese you want.
The important thing to remember is to use a cheese that melts well. Monterey Jack, Oaxaca and Chihuahua cheeses would work very well for this recipe as they all melt very easily.
Additionally, you can use Whole Wheat Flour Tortillas instead of Plain Flour Tortillas. Whichever you prefer.
Recipe Variation
If you like your quesadillas to have a bit of a kick, substitute the green bell peppers for some diced jalapeรฑos.
You may want to cut back on the number of jalapeลos depending on your taste buds. Some diced green chilies would pair nicely as well.

Gather your Ingredients
You will need the following ingredients to make this Pepperoni Pizza Style Quesadillas recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.
- Flour Tortillas
- Mozzarella Cheese
- Sliced Black Olives
- Red Onion
- Green Bell Pepper
- Pepperoni
- Parmesan Cheese
How to Make Pepperoni Pizza Style Quesadillas
- Preheat the oven to 400ยฐF.
- Place 4 tortillas on the counter and spread about 1/3 cup of mozzarella cheese over each. Sprinkle a few black olives, 2 tablespoons of onion, and 2 tablespoons of bell pepper over the cheese.
- Top with the pepperoni covering the entire surface. Sprinkle another 1/3 cup cheese over top. Cover each with one of the remaining tortillas.
- Brush a little water on top of each tortilla. Spread 1/4 cup Parmesan cheese in a thin layer over top of each tortilla.
- Place the quesadillas, Parmesan side up, on a wire rack standing on a baking sheet. Bake 10 to 12 minutes, checking frequently so as not to burn.
- Cut into wedges and serve immediately.
