Pulled Pork Quesadillas

If you have some leftover pulled pork and not sure what to do with it, you’ll love these awesome quesadillas packed full of flavor.

Who doesn’t love a good savory Quesadilla? I had some leftover pulled pork so decided to use it up to make these Quesadillas.

If you don’t have any leftover pulled pork on hand don’t worry. You can try my Smoked Dr Pepper Pulled Pork or my Smoked Pulled Pork recipe. Or even easier, buy some pre-made pulled pork from your favorite grocery store.

A quesadilla is a Mexican dish consisting of a tortilla filled primarily with cheese, and sometimes meats, beans, and spices, then cooked on a griddle.

Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States. You can read more about it here Quesadilla – Wikipedia.

If you don’t have any Oaxaca Cheese on hand, you can substitute for any good melting cheese like Mozzarella, Chihuahua or Monterey Jack cheese. Just make sure it melts well because a quesadilla deserves a hot and gooey cheese.

I like to use 2 tortillas when making quesadillas. You can make a quesadilla with just 1 tortilla by putting the filling on top and folding it in half like a half-moon. Not my preferred way but works in a pinch.

You will need the following ingredients to make this Pulled Pork Quesadillas recipe. For ingredient amounts please refer to the printable recipe card at the bottom of this post.

  • Flour Tortillas
  • Pulled Pork
  • Oaxaca Cheese
  • Red Bell Pepper
  • Yellow Onion
  1. In a skillet over medium heat, grill the red peppers, onions, and pulled pork.

  2. Add the cheese to your tortillas, then add the pulled pork mixture, making sure you spread them evenly.

  3. Slide the tortilla with the cheese mixture onto a skillet over medium heat. Place one of the remaining tortillas on top.
  4. Press down with a wide spatula to remove any air pockets. Cook for 1 to 2 minutes, checking frequently, until the bottom tortilla is crisp and browned.

  5. Turn over, and cook for 1 to 2 minutes more, or until lightly browned.
  6. Repeat this process for the remaining quesadillas.
  7. Cut into wedges and serve immediately.

  • ½ Cup Red Bell Pepper, sliced
  • ¼ Cup Yellow Onion, sliced

Instructions
