There's nothing like a nice fresh green salad for dinner. This Ranch BBQ Chopped Salad is easy to make and packed full of flavor. Give it a try, you won't regret it.
There isn't anything extra special about this salad but the corn and black beans make this salad super flavorful. If you aren't a fan of fresh cilantro you can leave it out. Maybe substitute for some fresh parsley.
You can use whatever kind and flavor of BBQ sauce you have on-hand but be mindful that some flavors of BBQ sauce might not play nice with the other ingredients. Personally I like to use Sweet Baby Ray's Sweet Vidalia Onion BBQ Sauce for this recipe.
If you are serving this salad as a main dish, you will most likely only get 2 servings. Serving this salad as a side you should get 4 servings. Personally I love this salad as my main course. So filling!
If you don't use black beans often, make sure you rinse them off really well in a colander. I like to rinse them till the water runs clear. While you must drain your corn, there is really no reason to rinse it.
💭 Ingredient Substitution
I like to use Romaine lettuce for this recipe but you can substitute for some Leafy Green Lettuce or whatever else you have on-hand. No matter what kind of lettuce you select this is one delicious salad!

Excellent recipe. Very easy to make and delicious. I am definitely not a fan of ranch dressing but in this recipe it gives it a nice flavour. A must for a lunch or supper.
